Last fall, the iconic supermarket of the green movement was in trouble. After years of growth, Whole Foods’ stock prices were plummeting.

Nancy Koehn is professor of the history of retailing and consumer behavior at the Harvard business school.

She says despite the lingering high unemployment rate and the store’s notoriously high prices, things are looking better today for Whole Foods.

“They’ve rebounded very effectively over the last six months. their stocks trading up considerably, traffic is up in the stores, per customer tabs, or receipts, if you will, are up.”

But Koehn says Whole Foods customers might be a core group that’s committed to buying green. The jury is still out on whether green companies will win over mainstream consumers.

Lots of people rushed to Wal-Mart last Christmas – to get things as cheaply as possible in the wake of the financial meltdown. But Koehn says the large-scale flight to Wal-Mart has mostly run its course.

“The question now is – are consumers now, in this post crisis world, going to move to a new normal? – which includes a different way of thinking about the impact of our dollars on how what we buy affects a whole range of issues and people in the world.”

In other words, will people re-consider buying cheap goods made in China since many American jobs have been lost to that country, environmental concerns about products from China and that country’s record on human rights.

And, Koehn says even Walmart is becoming greener both in its operations and its products. For example, it now sells only energy efficient lights bulbs.

Joel Makower is editor of GreenBiz –dot-com. He says changes at WalMart are just a small part of the green business story today. Although, he might not have said that a year ago.

“I think the remarkable story of 2009 is that the green economy did not disappear when the overall economy went south. that it’s not only remaining in place, but the number of products and services from better cars to better cosmetics to computers are coming in to the market.”

Even though we’re the ones who buy these things, Makower says the future of the green business isn’t really about consumer demand. He says there’s a confluence of green technology, government regulation and available capital that’s driving the green economy forward.

“We’re going to be seeing that in energy, we’re going to be seeing that in buildings, we’re going to be seeing that in vehicles. We’re already seeing that in information technology. Where these things are coming together and regardless of consumer demand are being made available and attractive to consumers.”

Makeower gives the example of the IPOD. He says it wasn’t developed because people demanded it, or because we were running out of material to make CDs – it just offered a better technology – and so consumers have been buying it. In the process, the IPOD saved tons of material that was to be used on CD packaging.

These new products aren’t necessarily being labeled green products. And Business historian Nancy Koehn says American companies are going through a huge transition that won’t make such labels necessary.

“Because pretty soon the core aspects of what we define as green today will be such a part of so many businesses that we won’t make this distinction, we won’t have this kind of differentiation by the word green.”

Koehn says companies that have already started going green might be ahead of their competitors right now – in terms of energy efficiency and offering a wider array of green- products. But because of stockholder demands, government incentives– and eventually consumers – other businesses will likely start catching up to them.

Reducing Gift Wrap Waste

Americans produce 6 million extra tons of waste between Thanksgiving and New Year’s.

All that trash is enough to make Bob Lilienfeld cringe. He runs what’s called The Use Less Stuff Report. Lilienfeld says, one way people can reduce all the holiday waste is to stop wrapping presents.

“When you think about, wrapping paper is one of the most disposable items we have. It doesn’t provide any real functional value. And it’s used for basically a minute. And then it’s torn off and thrown away. So, from the environmental perspective, it really doesn’t make a lot of sense.”

Based on the last available data by the Environmental Protection Agency, the average American uses two pounds of wrapping paper a year. Lilienfeld says about half of that is used during the holiday season.

“If you cut that in half, down to a pound, that would save, what are there, about 300-million people in the country? We’re talking 300 million pounds. That’s a lot of paper.”

But it’s so pretty. And some people say that paper does serve a good purpose. Besides being pretty, it also helps to hide the gift.

Lizzie Post is the great, great-granddaughter of Emily Post – famous for her etiquette advice. Post says a wrapped gift is part of holiday decorum.

“You don’t want to just plunk down a box, straight from the store, and say, ‘here you go.’ That sort of has a lackluster feel to it.”

And it’s a tradition. Gift wrapping has been around for a long time – maybe as far back as 105 A.D. and the invention of paper. They started selling mass produced wrapping paper in the U.S. somewhere around1920.

Post says it looks nice, it shows care, and it’s fun.

“I think we’ve gotten used to the idea of unwrapping something or unfolding it and having that element of surprise there. And I think we wouldn’t want to lose that. That’s a nice tradition that we’ve all gotten used to.”

But Post says there are lots of creative ways to wrap gifts that aren’t wasteful. She suggests using cloth, reusing wrapping paper, or buying gift wrap made from recycled paper.

And after talking with a few shoppers, you can see how tough it would be to get people to stop wrapping gifts altogether. Here’s what a few had to say.

Shopper 1: “It would be hard for me to imagine that we would get to a point that we would say, ‘gee it’s pretty wasteful, so we won’t wrap any presents this year.’ I doubt that that would cross our minds.”

Shopper 2: “Why are they telling me to ruin a Christmas tradition? I mean, as if I didn’t already feel guilty enough about the mass consumerism that is Christmas. Now I’m being told not to wrap gifts. No, I’m certain they’re right about the mass of waste it’s going to create.”

The environmentalists who want us to use less paper don’t want to ruin the holidays. Bob Lilienfeld just wants people to look around for new ways to make gifts surprising – without piling up the trash.

“Go down to your basement, open your closets, go up to your attic and look at the paper that you already have on hand. And odds are you already have enough wrapping paper to make it through.”

At least for this year. At his house, Lilienfeld says he’s buying concert tickets for his teenagers, so they don’t need wrapping. And he’s hiding the gifts for his 3-year old – a scavenger hunt can be so much fun!

Jewish people light candles each of the eight nights of Hanukkah – a tradition dates back 2200 hundred years – when the Jews reclaimed the Holy Temple in Jerusalem from the Greeks.

Rabbi Arthur Waskow says they needed oil to light the temple.

“They lit the menorah with just one day’s worth of oil, and, according to the legend, it lasted for eight days, until the new oil was ready.”

A few years ago, Rabbi Waskow realized this is an environmental message for people today.

“This could be seen as the conservation of oil.”

So Waskow wants people to see Hanukkah as a time to conserve natural resources in their own lives – and in public policy.

He’s encouraging people to drive less,
to support biking, railways and walking paths, and
to rest more, so we emit less carbon.

The food available in school in Shaker Heights, Ohio looked a lot different a few years ago. They used to sell lots of pop and French fries. Today, we’re standing at what’s called the Nutri-Bar. Students can buy salads, sandwiches, even sushi.

“Fresh, healthy and portable. That’s the motto of the Nutri-Bar. This has been a big hit with our students.”

Peggy Caldwell is spokesperson for the school district. She says a group of parents started worrying about national obesity and diabetes rates among children and pushed for the change.

“They want us to provide healthy choices. They want us to provide nutritious meals. They understand that students learn best if they are healthy and well fed.”

Parents worked with the district to improve the food available in the schools.

“And, here they come.”

It’s lunchtime. Students are packing into the cafeteria.

But the line is much longer for the hot meals. Cheeseburgers and pizza are always on the menu. Today’s special: chicken strips and mashed potatoes. That might sound like a lot of fat and salt, but Caldwell says it’s actually pretty healthy.

“The chicken strips are baked now, they’re not fried. The potatoes are baked or, if they’re mashed potatoes, they’re made with low fat milk. There’s less sodium. They may look the same, but they’re better for you than they used to be.”

Caldwell says they’re starting to make pizza with whole wheat crust and the pasta is all whole grain.

But serving healthier food has cost the district. They had to buy ovens so they could bake. They have to pay more for labor to chop vegetables and make smoothies. And the food, itself, costs more. Fruits and vegetables come at a higher price than those processed foods that are high in sugar, fat and salt.

Especially in schools. Schools can actually get 15% to 20% of their food for free through the U.S. Department of Agriculture.

Janey Thornton is undersecretary for food and nutrition at the USDA. She says when farmers have too much of, say, blueberries or green beans or ham, the USDA buys those commodities for schools.

“If we have an abundance of blueberries – in order to stabilize the market, to keep prices near where they should be, then those products are purchased by the federal government.”

Then the government offers those blueberries for free to schools. That sounds might sound like a win-win – helping farmers and schools. But lots of times those berries are processed into unhealthy things – like glazed blueberry snack pies – before they get to schools.

Peggy Caldwell says the government food presents a challenge. Schools can’t afford to turn down free food. But it’s often high in salt and fat, and at odds with her district’s efforts to provide healthy lunches.

“It’s not always consistent with the nutritional guidelines. It can be a challenge for a staff to use in a way and in quantities that really meet the health requirements we’re trying to meet for our students.”

Some critics have gone so far as to call the schools garbage disposals for un-sellable farm commodities. Janey Thornton with the USDA scoffs at that suggestion.

“I would love to have that garbage disposal in my home, in my freezer if that were the case.”

Thornton worked 25 years in school nutrition at a local district before coming to the USDA. She says the ground meat has gotten leaner, the canned fruit is now healthfully packed in a very light syrup.

For those that disagree, debating the federal government might seem like a huge undertaking. But there maybe even tougher tasks for schools encouraging healthful eating, like Shaker Heights.

Grant: “What are you having for lunch?”

Student: “Ice cream. Chocolate. Soft serve. It’s really good.”

Gwen Rosenburg was appalled when she saw the menu at her son’s elementary school. It was called a heart-healthy menu.

“So, I saw chicken patties and corn dogs and chicken nuggets, hot dogs and hamburgers. And super-donuts for breakfast and s’mores flavored Pop Tarts for breakfast. And then I got really angry – because I don’t like to be called stupid.”

Super-Donuts. That sounded like junk food – not heart healthy food. So Rosenburg called the school district to complain.

But her district, like many, hires an outside company to take care of food service. So Rosenburg started writing to the company, Aramark, to find out the nutritional content of the foods it was serving. She didn’t get many answers.

Rosenburg didn’t want her kids to eat the school food.
Most people told her to stop complaining and just pack lunch.

But that only helped her to realize why this bothered her so much. Lots of families don’t have enough money to pack lunch – so their kids have no choice but to eat the subsidized school meals.

“It bothered me that my tax dollars were paying for food that I wouldn’t serve my kids. Once I made that realization it seemed suddenly unethical for me to do nothing and say, ‘thank God I’m not poor.’”

Rosenburg went on a campaign and contacted everyone she could think of about it. She also started her own blog to document her attempts to improve school meals in her district.

Patrick McMullen is in charge of food service in Rosenburg’s district. He works for the company, Aramark. McMullen says things are a lot better now than they were ten years ago. Back then, the high school had soda on tap, free with lunches.

Today, you can’t even buy carbonated beverages in the schools here. McMullen says most people agree that was a healthy change.

But it’s not usually that clear: he says every family has its own idea of what is good food.

“Somebody likes chicken nuggets, somebody doesn’t. A lot of people see chicken nuggets as an unhealthy item. Some people think it’s perfectly fine because it’s a lean meat.”

McMullen says it’s his job to make sure the school meals stay within the district’s budget, while meeting USDA nutritional guidelines. And that kids buy and eat them. That’s why things like that Super-Donut exist.

“A Super-Donut is a fortified donut that’s made with juice and it’s infused with nutrients.”

McMullen says some parents see Super-Donuts as a healthy item. But lots of parents around the country have complained about the Super-Donut.

Janey Thornton is Undersecretary for Food and Nutrition at the US Department of Agriculture. The USDA is in charge of the national school lunch program.

Thornton says a food like the Super-donut is handy. Kids like it and they can eat it at their desks. She says parents wouldn’t complain if it was shaped like a piece of breakfast bread.

“Because it’s round with a hole in it, and we assume that it has donut-like qualities then, it sometimes gets a bad rap.”

But some parents think it’s giving kids a false impression of what’s healthy. Gwen Rosenburg says the Super-Donut is a prime example of how school meals are setting up kids for a lifetime of bad eating habits.

“Alright, I’m not supposed to eat a donut for breakfast. Sometimes I do, right. But I don’t believe that it is healthy. I know that it is not a healthy food option. But when you present it to children and say this is what the government, taxpayers, this is what your community has purchased for you to eat and you get it for free. It’s a donut. What exactly are you teaching them to do for the rest of their lives?”

Rosenburg says there are so many efforts to teach kids healthy habits, but those messages are easily undermined in the cafeteria.

There are districts around the country that have been improving school meals – offering salad bars and whole grain breads. Rosenburg says all her efforts have made some difference. Her district has added foods she thinks are healthier to the menu, and her son even buys his lunch sometimes.

“All I really wanted all along was something that I could say ‘I would let my kid eat that.’ And if I would let my kid eat that, then I would gladly whatever tax dollars to give it for free to the kid whose family can’t afford it. But if they’re going to serve food that I won’t let my child eat, I do not want them to serve that to impoverished children. It’s morally wrong. And it reeked to me like a form a classism.”

Four years ago, Linda Barberic gave her left kidney to her sister. The surgery went well. But since then, there have been a lot of other health problems in the family.

“We’ve had a few strokes in the family, we’ve got diabetes, we’ve got high blood pressure, we’ve got some other heart conditions, a few heart attacks.”

That’s some serious stuff. Linda thinks a lot of it has to do with the way her family eats: lots of salt, fat and sweets. She is hosting everyone for Thanksgiving dinner. And thought this might be a good time to get them all on board with healthier eating.

So she sent out a mass email to the family.

“So I thought this year, why not give everyone a challenge and make it a healthy Thanksgiving. Really – no fats, no butters, no salts, no heavy creams.”

Linda even suggested some recipes: steamed green beans with lemon zest, fingerling potatoes roasted with fresh garlic and thyme.

The resounding response: No salt, no fat, no fun.

Someone even said they wouldn’t come. They wanted the turkey with gravy, green bean casserole with crispy onions on top, and Mom’s dumplings with lots of butter.

Her brother-in-law Matt Previte is one of those with a heart condition. He and Linda’s sister, Sandy Previte, appreciate Linda’s thought, but…

Matt: “For one meal, for one day, one special occasion – it’s not worth it.”

Sandy: “How often do we eat gravy? Twice a year. So I’m like, let’s do the traditional. Why not? Let’s just stick with what it’s about – people getting together to have good food.”

So Sandy says why not have the gravy, have the butter?
But her sister Linda says it’s not one or two days a year. Her family, like many, eats fatty, salty foods all the time.
That’s one big reason why two-thirds of American adults are considered overweight or obese. And diabetes has become an epidemic.

So, why do we keep going back for more – when we know it’s making us sick?
Linda Spurlock is director of human health at the Museum of Natural History in Cleveland.
She says we’re hard-wired to crave sugar, fat and salt.

“If you did not have the inherited yearning for fat or for sugar and grab it anytime you could get your hands on it, you probably would not live to reproduce back 2- or 3- million years ago.”

But while our ancestors had to smash open bones to get to the marrow – so they could get the fat they needed – we can just pull up to the drive through and order whatever we want to eat.

Spurlock says the original Thanksgiving meal was probably a small, lean turkey, squirrel, raccoon, and roasted root vegetables.

“And how it got bigger and bigger and bigger –
I have a feeling that it wasn’t until quite recently that people had the expectation of several kinds of pie for dessert and yes giblet gravy and mashed potatoes and sweet potatoes.”

Spurlock says Americans can start eating healthier by training themselves to enjoy the simple taste of vegetables. But she says Thanksgiving probably isn’t the time for it.

Linda Barberic has come to the same conclusion.

“ I kind of just backed off on it. And said, ‘do what you’re going to do.’ Thanksgiving is about family. I’m grateful that everyone is healthy this year and everyone is here. So, I’m just grateful to have Thanksgiving. But, I have a feeling there will be some fat. (laughs)”

Companies for the Climate Bill

are watching very closely. Some are
worried that a new law could bankrupt
them with energy costs. But others
see a bright future under carbon limits.
Julie Grant reports:

Jeff Holmstead is an environmental attorney and has been working on clean air issues for two decades now. He led the Air Division of the Environmental Protection Agency under the Bush Administration and has worked on some of the most significant environmental regulations in the nation’s history. But he says the current climate change bill is the biggest thing he’s seen.

“It’s a big deal. Much bigger than really any other environmental legislation or regulation than people have had to deal with in the past.”

Holmstead says the stakes are just so high. He says the costs could reach into the hundreds of billions of dollars for American businesses.

“And there’s just also enormous amounts of uncertainty as to how we would fundamentally change our society, which has really grown up largely using fossil fuels. Whether we can truly switch away from that in the kind of time frame that people are talking about.”

But a big shift away from fossil fuels isn’t scaring off everybody. Some businesses are actually lobbying for climate change legislation.

Commercial: “Climate change is real. But solving it is a real opportunity. If we build clean energy technologies in America, we’ll generate the jobs that will power the 21st century and jumpstart our economy. We need a can-do plan that caps greenhouse gas pollution and creates jobs here at home.”

This commercial is not made by a bunch of tree-huggers, liberals, or Al Gore. It stars the South Carolina Chamber of Commerce, and corporate CEOs from Deere and Company and the Eaton Corporation. Eaton makes everything from circuit breakers to hoses to hybrid trucks.

“Yeah, Eaton is a power management company that sales about
15-billion dollars and 70,000 employees worldwide.”

That’s Joe Wolfsberger. He’s in charge of environmental programs at Eaton. The company wants Congress to approve climate change legislation and to limit greenhouse gas emissions. Wolfsberger says it could be a great kick-start for the economy and help create jobs.

“We also see a very big opportunity for Eaton and other companies, especially in this power management area. We’ll be able to provide solutions for people to help reduce greenhouse gas emissions going forward, to help reduce the amount of fuel they consume on the road as part of their operations.”

The company has already created new hybrid transmissions for delivery trucks. They’re used in lots of UPS, Fed-Ex, and Wal-Mart trucks. Wolfsberger says it improves gas mileage 50% to 70%.

Wolfsberger says a lot of companies are still questioning whether climate change is real. He says Eaton CEO Alexander Cutler gets asked about it a lot.

“And his response to them is, ‘it doesn’t really matter if the data is good or not. It doesn’t matter if it’s a normal climatic cycle. The question is, if you as a company can do better, you should do better.’”

But that may be easy to say when your company will benefit from climate change legislation. It’s a lot tougher when your business is producing natural gas or making steel and depends on heavy use of fossil fuels.

Environmental attorney Jeff Holmstead says the price of reducing greenhouse gases is going to be a lot higher for these types of companies if a bill passes. He says that’s what the debate is all about.

“Should we be spending a hundred billion dollars a year, should we be spending a trillion dollars a year? I think most people believe we could significantly reduce our CO2 emissions, it’s just a question of how much we’re willing to pay, and also what we get for that.”

And this what Congress will be debating in the coming months – whether the possibility of higher energy bills is worth the chance to have a more stable climate and more energy independence.

This party is full of business owners, union leaders, MBA students, and lots of other folks interested in figuring how to run successful companies that aren’t bad for the environment. Holly Harlan has been hosting these kinds of gatherings for nearly a decade. She has literally made it her job to assist companies move toward sustainability. She started this group, Entrepreneurs for Sustainability – known as E4S – back in 2000.

When she started out, it was nearly all start-up companies. Now it’s more established firms. She wants me to meet Christopher Moody.

Harlan: “Well, Chris works for a larger company. He’s on the green council at Keybank.”

Moody: “Sure.”

Harlan: “And so, they’re getting started on their sustainability journey. And he was just sharing with me what they’re first steps were.”

Moody: “Our first steps are to begin to understand what it is what we’re currently doing. Where are we now? And, next step is, how can we improve on it? I think that’s where it all begins.”

Harlan: “Really, doing a baseline, understanding what you’re doing now that’s already moving in this direction. Celebrating those successes and finding the next steps.”

When Harlan first started E4S, most of the companies she heard from then were starting to offer green products and services – green cleaning, green lawn care, and solar panels.

“Whereas, companies like GE and Wal-Mart, certainly this wasn’t on their radar in 2000. But around 2006, then we started hearing more about existing businesses that wanted to change.”

Harlan says E4S wanted find ways to assist those already established companies to make changes.

E4S parties aren’t just for networking. They have an informational component. This one is focused on solar panel installations for businesses. Harlan is trying to give business leaders more information about whether it’s a good energy strategy for their factories, banks and start-up companies.

“And when is it right to invest? Is the technology ready? Are the costs, you know, what is the support I can get to implement these. To understand the opportunity in solar. And providing people the opportunity, I say, kick the tires and really figure out is this worth something for my business to invest in?”

After an initial information party like this, E4S will offer workshops – and tours – so business owners can take a look at how solar energy is being used by other companies – to give them a real on-the-ground understanding. Then Harlan’s group goes one step further – and helps those that are interested connect with solar installers.

Sustainable business groups like E4S have been forming in cities around the country in recent years.

Jeff Krejci is with Interface Carpet Company – which has been working toward becoming a green business for many years. He says the business community needs independent groups like Entrepreneurs for Sustainability.

“And it’s interesting. Everybody’s reading it. You hear it. It’s on every billboard. But people really want to know – what does sustainability mean? And there’s really not a whole lot of places you can turn to. You can go online. Go on websites. But still, it’s everybody trying to promote their own product.”

The sustainability groups want businesses to see that they can reduce their costs – while doing better for the environment and society.

Before she started E4S, Holly Harlan worked in industrial engineering and economic development. But once she heard about companies designing their processes more efficiently, more sustainably – her own light turned on.

“I suddenly saw opportunities everywhere; everyplace that I visited. From museums, hotels, restaurants, manufacturing companies. Places to save money and places to make money. Because I saw the world differently.”

Now Harlan is trying to get more people to see through these new glasses. To provide a better quality of life in the future – and make good economic decisions today.

Many say they’re worried about vaccine

Some of the schools near where I live in Ohio have absentee
rates of 20%. Kids are reporting flu-like symptoms. Some
schools are even closing down to keep more people from
getting sick.

At the same time, a study by the Harvard School of Public
Health finds that only 51% of parents nationwide plan to get
their kids vaccinated against the new swine flu.

The vaccine has a serious public relations problem.

One reason people are worried: thimerosal.

Thimerosal is a preservative used in vaccines. It prevents
bacteria and fungus from contaminating vaccine bottles.
Thimerosal is almost half mercury, by weight. And that
makes a lot of people nervous.

As a precaution, it was taken out of most American vaccines
about twenty years ago. But it’s still used a lot in flu shots.

Lynn Gregor has two little children. She’s been leaning
toward getting them vaccinated for swine flu.
But she just heard about thimerosal, and she’s concerned.

“Because even if it’s a teeny, tiny bit of mercury, which is
what that product is connected with. Because a teeny tiny
bit of mercury can have a big impact.”

The Centers for Disease Control says the type of mercury in
thimerosal is different than the kind that’s in thermometers.
Lots of people think thimerosal is linked with increased
autism rates. But public health officials say science does not
bear that out.

“There has been no credible evidence of a harm that’s linked
to thimerosal.”

That’s Donn Moyer. He’s spokesman for the Washington
state Department of Health. It’s one of six states that have
passed laws making it illegal to give young children and
pregnant women flu shots that contain thimerosal.

Moyer says the health department didn’t ask for the law. It
says thimerosal is safe. But, politicians wanted to appease
people concerned about thimerosal.

The state of Washington’s concern is not about the actual
safety of thimerosal, it’s about the public’s perception of
thimerosal.

“The goal was to maintain public confidence in vaccine
programs and to encourage parents to have their kids
vaccinated.”

But now that the new swine flu is here, Washington is
suspending its law. The swine flu seems to be hitting young
children especially hard, and Moyer says infants and
pregnant women should get immunized – even if the only
shots available contain thimerosal.

“We don’t see any credible risk of health effect from the
thimerosal and it could protect against a very, very serious
influenza infection.”

That seems like a mixed message to parents. And it’s part
of the confusion between the science and politics of this
issue.

Anchor: “We are tracking H1N1 and health officials here in
the US…”

On this Fox news report Dr. Kent Holtorf is labeled an
“infectious disease expert”, and he warns people against the
vaccine.

Holtorf: “And it’s been shown to cause autism in children
with mitochondrial dysfunction. It’s controversial, though
highly implicated.”

Anchor: “Would you give it to your kids?”

Holtorf: “I definitely would not.”

Some Right-leaning commentators are sharing their
suspicions about the vaccine from the government. And, on
the Left, one natural health newsletter put out a special
edition warning against vaccination.

This all leaves federal health officials with a big job to do:
use the preponderance of science to convince people that
swine flu is potentially more dangerous than the vaccine and
thimerosal.

The mother we talked to – Lynn Gregor – wants to protect
her kids from swine flu, and she’s thinking about getting
them vaccinated.

“If they don’t get it, I’m going to be really worried all winter.
I’m going to be really concerned.”

But when Gregor hears so many people are opting out of the
vaccine – and that some states actually ban thimerosal most
of the time – she’s not sure what to do.

year ago, Julie Grant spoke with the
owners of a goat cheese farm. She
visited them again this year. Now,
they’re opening a new creamery, despite
lots of economic obstacles:

A lot of companies have been slowing
down and cutting back because of the
economy. But tough times aren’t
stopping some new businesses in the
midst of the ‘local food movement’
from moving forward. More than a
year ago, Julie Grant spoke with the
owners of a goat cheese farm. She
visited them again this year. Now,
they’re opening a new creamery, despite
lots of economic obstacles:

Abbe Turner just quit her day job. She’s had a good-paying
university job – with benefits – for many years. But today
she’s waiting for the delivery of a $5,000 dollar pasteurizer.

“There we go. There’s my pasteurizer.” (cheering)

The truck arrives with a six foot round stainless steel tank.

“I never thought I’d be so excited by a 3,000 pound hunk of
metal in my entire life. But…” (laughter)

Abbe and her husband, Anderson Turner, started dreaming
of goat cheeses three years ago. This big hunk of steel will
help them finally to get their creamery off the ground.

“The pasteurizer will allow us to make cheese in small
batches, artisan cheeses. We’ll do some cheves in the
pasteurizer, some tommes and probably a goat gouda.”

The Turner’s dream started after they bought a few goats for
their hobby farm. They made a little cheese for the family.
And they liked it. So they kept getting more and more goats.

Now they have more than 160 Nubians, La Manchas, and
Alpines. Abbe and Anderson had been getting up before
dawn every morning to milk them. By hand. Then they
would get their 3 kids ready for school and head off to their
full-time day jobs.

The Turners wanted to automate milking, to make things
easier and faster. They even had a group of 23 investors
chipping in to renovate their barn into a milking parlor. But
that was last fall.

“Unfortunately, with the stock market crash, the calls kept
coming in. ‘Hi. We really believe in what you’re doing.
Unfortunately, I’m watching my investments tank and a goat
cheese operation is not something I can write a check for
right now.’”

Some people thought it would be smart to forget about
starting a new creamery in the midst of a recession. Matt
Ord used to sell the Turners feed for their goats. But he had
to shut down his family business when the economy
crashed. Now he’s working with Abbe to build her goat farm
and creamery – even though he’s not convinced it’s the right
time for this kind of venture.

“She’s nuts. But I hope everything goes good for her, I really
do. She’s got a lot of patience and a lot of nerve starting this
business right now. It’s a very scary time. And I know
things are very tough for everybody.”

Abbe likes to think of her family as bold, rather than nuts.
And most of her investors have come back on board since
last year.

Her husband Anderson Turner is glad she’s starting full-time
to get the creamery off the ground instead of waiting for the
economy to turn around.

“I can’t think negatively about opportunity. My time is now.
My opportunities are now, my life is now. So, this is the
cards I’m dealt with. I’ve got to deal. So, let’s go.”

The Turners believe that the local food trend is just getting
off the ground, and that support for local foods will more than
compensate for the tanked economy. They say restaurants
have already put in orders to buy their cheeses.

Now all they have to do is start making it.
