Cows are gassy. They burp methane gas and their manure also emits methane. Methane is 21 times more potent than carbon dioxide.

In Copenhagen, Ag Secretary Tom Vilsack promised to cut greenhouse gas emissions on farms. He said the government will be giving farmers more money for methane digesters. They’re machines that capture methane from manure.

Katie Feeney is with the environmental group Clean Air Council.

“If you can make it easy for them and cost effective for them to be sustainable, to reduce their emissions, then I foresee a lot more people participating in programs such as that.”

But some environmentalists say voluntary programs are not enough. They say big dairy farms should be regulated more.

Starting in the New Year, all kinds of businesses will have to report their greenhouse gas emissions. But there’s a big exception: large concentrated animal farms don’t have to.

The dairy industry often uses images

But that’s not how most dairy farms
look these days. Instead of green
pastures, thousands of cows are penned
up in huge metal pole barns. The
mechanization of dairies makes for
cheaper milk at the grocery store.
But, in many places around the country,
it’s also meant a lot of pollution.
Mark Brush visited a place where they
say big dairies are doing it right:

Mark Brush visited a place where they
say big dairies are doing it right:

Tom Crave and his brothers run this dairy in central Wisconsin. Crave says, when they first started out, he and his brothers were single, they had 80 cows and a used car.

Now, they have around a 1,000 cows and families to look after. He says they had to get big to survive.

“It takes a lot of money to live. That’s what’s… that’s what’s driven this here. It’s just basic economics.”

It’s a theme farmers all over the country have been hearing for decades. Get big or get out. You can’t make money unless you grow.

The Crave Brothers milk their 1,000 cows three times a day. They use automated milking machines. And they turn that milk into cheese that they make across the street in their cheese factory.

But milk is not the only thing cows produce. These farms deal with millions of gallons of liquid manure.

Most farms store the manure in lagoons – basically huge pits of waste contained by earthen berms. Then, when these lagoons fill up, they spray or inject the liquid manure onto the ground as fertilizer for crops. It’s also the main way they have to get rid of all that waste.

Sometimes these big dairy farms have problems. Liquid manure runs off the crop land, contaminating rivers and lakes. And, in some cases, the earthen berms holding back the manure has leaked or given way, releasing a wave of manure, causing huge fish kills or polluting well water.

But regulators here say the Crave Brothers have been doing a good job taking care of their manure. As have most of the other big dairy farms in Wisconsin. That’s in part because these farms actively regulated in the state.

Gordon Stevenson is the Chief Runoff Manager for the Wisconsin Department of Natural Resources.

“It is not coming from these largest farms for the most part. The manure management on our 30,000 other smaller farms can be a good bit worse, and those people are not regulated.”

Dairy farms that have fewer than 700 milking cows usually are not regulated under the Clean Water Act until there’s a major problem. And some farms stay under 700 cows to avoid regulations.

“When we encounter environmental problems associated with one of these smaller farms, they can be offered cost share assistance. They’re largely voluntary programs.”

If Stevenson finds a smaller farm that’s polluting, he can offer them some state money to fix the problem. But, beyond that, he says there’s not much his office can do. As a result, some smaller farms pollute.

Jamie Saul is with Midwest Environmental Advocates. His group has represented people who were sickened from well water contaminated by manure. Saul says, there have been some problems with bigger farms in the state, but he admits the bigger challenge is how to control pollution coming from smaller, unregulated farms.

He says just offering them money to clean up is not good enough.

“We are the habit now of paying, and I think it’s pretty unique to the agricultural industry, that we pay them to reduce their pollution. Most other industries we don’t do that. We expect whatever industry it is to come into compliance with whatever standards are needed to protect the environment and public health.”

Saul says all states needs better policies to keep small farms from polluting. He says the regulations have to have that magic mix of stopping water pollution without putting too much burden on small farmers.


While Wisconsin regulators seem to be keeping an eye on their bigger farms, environmental activists say that’s not the case in other states. They say Clean Water Act rules are often not enforced against livestock farms – big or small – and that puts the environment and people’s health at risk.

Abbe Turner just quit her day job. She’s had a good-paying
university job – with benefits – for many years. But today
she’s waiting for the delivery of a $5,000 dollar pasteurizer.

“There we go. There’s my pasteurizer.” (cheering)

The truck arrives with a six foot round stainless steel tank.

“I never thought I’d be so excited by a 3,000 pound hunk of
metal in my entire life. But…” (laughter)

Abbe and her husband, Anderson Turner, started dreaming
of goat cheeses three years ago. This big hunk of steel will
help them finally to get their creamery off the ground.

“The pasteurizer will allow us to make cheese in small
batches, artisan cheeses. We’ll do some cheves in the
pasteurizer, some tommes and probably a goat gouda.”

The Turner’s dream started after they bought a few goats for
their hobby farm. They made a little cheese for the family.
And they liked it. So they kept getting more and more goats.

Now they have more than 160 Nubians, La Manchas, and
Alpines. Abbe and Anderson had been getting up before
dawn every morning to milk them. By hand. Then they
would get their 3 kids ready for school and head off to their
full-time day jobs.

The Turners wanted to automate milking, to make things
easier and faster. They even had a group of 23 investors
chipping in to renovate their barn into a milking parlor. But
that was last fall.

“Unfortunately, with the stock market crash, the calls kept
coming in. ‘Hi. We really believe in what you’re doing.
Unfortunately, I’m watching my investments tank and a goat
cheese operation is not something I can write a check for
right now.’”

Some people thought it would be smart to forget about
starting a new creamery in the midst of a recession. Matt
Ord used to sell the Turners feed for their goats. But he had
to shut down his family business when the economy
crashed. Now he’s working with Abbe to build her goat farm
and creamery – even though he’s not convinced it’s the right
time for this kind of venture.

“She’s nuts. But I hope everything goes good for her, I really
do. She’s got a lot of patience and a lot of nerve starting this
business right now. It’s a very scary time. And I know
things are very tough for everybody.”

Abbe likes to think of her family as bold, rather than nuts.
And most of her investors have come back on board since
last year.

Her husband Anderson Turner is glad she’s starting full-time
to get the creamery off the ground instead of waiting for the
economy to turn around.

“I can’t think negatively about opportunity. My time is now.
My opportunities are now, my life is now. So, this is the
cards I’m dealt with. I’ve got to deal. So, let’s go.”

The Turners believe that the local food trend is just getting
off the ground, and that support for local foods will more than
compensate for the tanked economy. They say restaurants
have already put in orders to buy their cheeses.

Now all they have to do is start making it.

whether the solution is as simple as spending more time in
the sun:

If you’ve been to the beach this summer, or anywhere
outdoors, you probably slathered on the obligatory
sunblock. If you were extra-careful, you wore a wide-
brimmed hat, or made sure your kids wore t-shirts in the
water instead of a skimpy suit.

Thing is, the solar radiation you work so hard to avoid is
also kind of healthy. That’s because it creates Vitamin D
through a chemical reaction in your skin.

“Vitamin D is essential.”

Susan Ott is a professor of medicine at the University of
Washington.

“It’s actually a steroid hormone that helps you absorb
calcium from your diet. And it works in your intestines so
the calcium can get into your system and become
available to the bones.”

Ott specializes in bone diseases like osteoporosis and
osteomalacia – both diseases that Vitamin D helps
prevent.

When you slather on sunblock, you’re also blocking the
creation of Vitamin D.

Before you run outside to soak up the last few rays of
summer unprotected, there’s a catch. Ott says no one
knows how much sun you need to get enough Vitamin D.
It depends on where you live, the time of year, how much
skin you’re exposing – and even the color of your skin.

“People with dark skin do not make as much Vitamin D
with the same amount of sunlight exposure – they need to
be out in the sunlight longer to get the same amount of
Vitamin D as a fair person.”

Scientists don’t have a way to recommend how much sun
you need to get enough D.

Kim Nowak-Cooperman is a nutritionist at Seattle
Children’s Hospital. She says a recent study looked at
people who live in Honolulu.

“They looked at 93 people who got three or more hours of
sun every day for five days a week. And they actually
found that half of those people were Vitamin D insufficient,
when you would think that they would be very, very high in
Vitamin D.”

Getting your Vitamin D from food can also be hard. It’s
naturally abundant only in oily fish like sardines, salmon
and mackerel. Since the 1930s, Vitamin D has been
added to milk to prevent the bone-softening disease
rickets in children. Now rickets is making a comeback.

Nowak-Cooperman says that’s because most kids don’t
drink enough milk to get the recommended daily
allowance of Vitamin D. And even that recommendation
might not even be enough.

“Originally that number was derived from the amount of
Vitamin D that would prevent rickets. We are now seeing
that Vitamin D has a more important role and that the
insufficiency of Vitamin D can be implicated in other
disease processes.”

Studies show Vitamin D might prevent everything from
rheumatoid arthritis to diabetes to tuberculosis. So the
American Academy of Pediatrics now recommends kids
get twice the US RDA for Vitamin D. That means 400 IU from either four glasses of milk or a
supplement.

Professor Susan Ott says adults should take a
supplement, too. She recommends 800 to 1000 IU. Any more than that, she says, and you risk
absorbing too much calcium.

“I think right now there’s a fad and people are taking too
much. I just went to the drugstore the other day and I saw
pills that were 5000 units. That’s enough to last you a
week! And I have patients that are taking that every day.
I’m worried they’re gonna get kidney stones.”

Ott says there’s also a trend for people to get blood tests
to determine whether they’re getting enough Vitamin D.
She says unless you’re elderly or have other serious
health problems, it probably isn’t necessary.

So what should you do? Ott says just pop that daily
supplement – 400 IU for kids, 800 for adults – and
keep slathering on the sunblock.

The Environmental Working Group issued a report saying not all sunscreens are equal. The group is critical of the Food and Drug Administration for not requiring sunscreens to filter out one kind of solar radiation.

“There currently are no requirements for UVA filters in sunscreens. And they’ve been working on sunscreen standards since 1978.”

David Andrews is a senior scientist with the group. He’s says with a gap in FDA regulation, the industry is making unverified statements about how well sunscreens protect.

“So these are claims that are very misleading to the consumer and it makes it hard for everyone to get adequate protection.”

The Personal Care Products Council is a trade group for sunscreen makers. It says the Environmental Working Group’s report is – quote – “unscientific and unsubstantiated.”

Bottom line: look for a sunscreen that does protect you from both UVB and UVA rays, reapply often, and stay out of the sun as much as possible.

The farm lobby’s worried Congress will try to regulate gassy cows.

But if you thumb through the giant climate change bill before Congress, you’ll find Section 811. That section says the government can’t regulate cow burps.

In the meantime, some farmers are trying to make their cows less gassy.

The company Stonyfield Farm is getting its dairy farmers to change their cows’ diets.

Nancy Hirschberg is with the company. She says the new diet has cut cow burps by 12%.

“It’s very much like people. When you are feeling good, you’re not having a lot of gas – you’re more efficient, more of your energy is available for living life. The same with the cows, you want as much energy as possible to go into producing milk, not into burps which are in fact, waste.”

She says the cows also have sweeter breath.

Rocket Fuel Chemical in Baby Formula

The CDC researchers tested 45 samples of baby formula and perchlorate turned up in all of them. They found it in really small amounts. But they did find formula made from cow’s milk had the highest levels and soy-based formula and synthetic formula had much lower levels.

Perchlorate has also been found in breast milk.

Dr. Josh Schier is one of the study’s authors.

“CDC still recommends that mothers’ breast milk is the best nutrition for a developing infant. Now the Food and Drug Administration, you have to remember, requires infant formulas to contain iodine and iodine can potentially help to offset effects of perchlorate on the thyroid.”

The American Thyroid Association says women who are pregnant or nursing should check with their doctor about taking an iodine supplement.

Then the FDA started secretly testing infant formulas made in the U.S. It found
melamine or a related chemical, cyanuric acid, in Nestle’s Good Start formula and
Mead Johnson’s Enfamil. ‘

Suddenly, the FDA decided a trace amount, one part per million is safe.

Lisa Madigan is the Attorney General for the State of Illinois. She says the FDA
should stop sales of those formulas.

“We have directly asked them to make sure these formulas are recalled as well as to
make sure that people across the country are aware of the problem.”

The FDA stresses levels of the chemicals in the U.S. infant formulas are more than
10,000 times lower than the levels reported in the Chinese formulas.

and into our bodies. The government insists that’s
not the case. Shawn Allee says one researcher
wants to change the debate about rBST – and convince
environmentalists to support the hormone:

Before I introduce you to the researcher who supports rbst or rbgh, I want
you to understand what she’s up against.

It’s well-meaning people like Steve Parkes.

Parkes co-owns New Leaf natural food store in Chicago. He decides what’s
on the shelves.

“A lot goes into making that decision. First and foremost, is it something
I would eat myself?”

And as for milk produced with rbgh, Parkes won’t sell it.

“People have been drinking milk for thousands of years from animals
that didn’t have have rgbh in them, so, I think I’m a little more
comfortable drinking milk from a cow that didn’t have rgbh than I am
from something that is a very, very new technology.”

A lot of people distrust rbgh, and that’s changed the milk market.
For example, some retailers like Starbucks won’t buy milk from dairies that
use it. More and more dairies are asking farmers to pledge not to use the
hormone.

The trend has frustrated researcher Judith Capper.

“People aren’t questioning the science basis of it.”

Capper is with Cornell University. She argues environmentalists and
consumers should take another look at the hormone, and see it as part of the
solution to global warming.

Capper recently co-wrote a study that began with a simple observation – in a
few decades, there will be many more Americans.

“The US population will have gone up from about 300 million people to
377 million people and we wanted to look at the environment impact of
producing enough milk to feed all those people.”

That scares Capper – because producing milk can make the global warming
problem worse.

That’s because feeding cows, and the cows themselves, lead to more
greenhouse gas emissions.

“Okay, there are six major inputs and outputs in terms of carbon.”

I won’t go through six, but here are a few.

First, there’s the feed that cows eat. Tractors have to plant grain. That burns
fossil fuels. Greenhouse gasses. Then feed is trucked to the dairy farm.
More greenhouse gasses. More cows, more greenhouse gasses.

So, you want as much milk as possible from each cow.

“If you give rbst to a cow, it will produce an extra ten pounds per day,
that’s quite an increase.”

And then there’s the other greenhouse gasses. From, um, the ugly end of the
cow equation.

The manure puts off other potent greenhouse gasses. And Cows belch
methane. Cows that use rbst poop and belch, spare the atmosphere even
more carbon.

All this leads Capper to a startling conclusion.

She says if farmers gave a million cows the hormone –

“Using rbst would be like taking about 400,000 cars off the road, or
planting three hundred million trees. Those are really big numbers.”

Judith Capper says she expects scientists will challenge her research – and
she welcomes a good debate about rbgh and rbst.

She says that’s better than this vague idea that the hormone might somehow
be bad without understanding the whole story.

“Choose organic, choose rbst-free, whatever, but base it on facts and
science, not on consumer perceptions that may not be factually correct.”

But, Capper’s got her work cut out for her.

Government statistics show consumer fear about rbgh has made farmers cut
the percentage of cows injected with the hormone.

corporate farms. That makes it difficult for smaller farms to survive.

So some small farmers are trying a different way of farming. Kinna Ohman reports that it can all start with a little ingenuity:

So some small farmers are trying a different way of farming. Kinna Ohman reports that it can all start with a little ingenuity:

Steve and Karen Getz run a dairy farm in central Vermont.

They’re the type of people who think outside of the box. Not only do they let their cows
out on pasture (and that’s rare among dairy farmers) they also let their cows be part of the
decision making on the farm. They think their cows have some pretty good ideas.

It all started on a hot summer day a couple of years ago. The Getz’s noticed after the
morning milking, their cows didn’t want to go out to pasture. Instead, the cows stood at
the gate that led into a large indoor shelter they call a ‘pack’.

The Getz’s built this ‘pack’ for the winter – so their cows could get out of the harsh
winds. They didn’t know why their cows would want to use it in the summer, but Steve
Getz says they gave it a try.

“And what we did was to open the gate to see what would happen. And what we
found was they’d come in and sleep in the pack in the blazing hot heat. And it
started to cool down in the afternoon. They went back out and grazed all night
long.”

Steve Getz says there’s been no loss of milk production. And all this makes a lot of
sense. But he says they never read about this in any book or farm magazine.

So Steve and Karen Getz thought they’d see if their cows had any more good ideas.

And the cows did.

Karen Getz says they were told their cows needed to give birth in an area separated from
the herd. So they built a fence around a corner area of their indoor shelter. But soon they
saw their cows didn’t like this – they wanted to be with the herd. So Karen Getz says
they let that happen too.

“She can go off into a corner somewhere and calve and have enough space. And
then she feels comfortable because she can get up and eat with the herd, she can be
nursing the calf. But she’s not separated. That’s less stress for the cow. You know,
we let them choose.”

It’s this kind of creativity that could help small farming come back to rural communities.

That’s what Martha Pickard thinks. She’s a grazing specialist.

She says many farmers only know the industrial model used by large farms. So when
they see families like the Getz’s grazing their cows, saving lots of money on feed, and
letting the cows make decisions on their own, it gives them other options.

“It’s such a huge deal to change your style of management. It’s like you getting up
in the morning and having a different job. So it takes a certain personality type,
someone who’s willing to think outside of the box, someone who’s willing to have
their neighbors stop by and say, ‘why are you doing it that way?’ It’s tough because
they’re usually on their own.”

Martha Pickard wants those small farmers to realize they’re not alone. And to know
there are others who are also rejecting the industrial way of farming.

Darrell Emmick, who’s with the Natural Resources Conservation Service, says he’s seen
progress.

Even though there’s been a net loss of small dairy farms in his region,
Emmick’s also watched farms with alternative grass based systems survive. He says
that’s hopeful.

“Twenty-five years ago, we’d pretty much gotten away from this. But today,
farmers putting cows on pasture. Finally, we have that on the radar screen. And if
I have a success story to share, that’d be it.”

Those small family farmers have realized the conventional wisdom pushed by the
agricultural industry might hurt more than help them. And people like Pickard and
