Salt in the American Diet (Part 2)

Darryl Bosshardt comes from a salt family. His grandfather started mining salt on their farm in central Utah. When Bosshardt hears about a new study that shows 100-thousand American lives could be saved each year if everyone reduced their salt intake by just a half teaspoon – he cringes.
He says salt is being given a bad name.

“And the challenge is, how we define salt.”

Most of the salt today all looks the same – perfectly pour-able, uniform bright white grains. It’s pure sodium and chloride, but Bosshardt, whose family owns the Real Salt Company, says it’s not the same as naturally occurring sea salt.

“Sea water occurs with many trace minerals. Over 50 to 60 trace minerals. It doesn’t occur, the salt in sea water doesn’t occur, as pure sodium and chloride.”

Bosshardt says those trace minerals help the body to process sodium, but most salt today looks perfect because the trace minerals have been taken out. He says when our bodies lack the minerals needed to process sodium; it raises blood pressure, which can lead to heart problems.

There are some books by holistic doctors that make these kinds of claims,but there’s not much science to prove this.

Most doctors today say salt is salt; sodium chloride. Our bodies need it, but not as much as much as most Americans are eating.

Dr. Kirsten Bibbins-Domingo is a professor of medicine and epidemiology at the University of California in San Francisco. She’s lead author of that new study on salt – the one that finds Americans could reduce deaths from heart disease by 100-thousand just by slightly reducing salt consumption:

“I don’t think we’re saying salt is bad and one of these other types of salt would be good. I think the newer types of salt that are on the market might have a lower sodium content for the taste that they have and so that would certainly be potentially beneficial.”

But Bibbins-Domingo says most Americans only get 6-percent of their sodium from their own saltshakers. The rest comes from processed foods and restaurants. So buying expensive sea salts with those trace minerals isn’t going to make much difference to most people. She says the problem is that salt is ubiquitous – people don’t even realize they’re eating it:

“If you start out with a healthy bowl of cereal with some milk, you’ve already consumed quite a bit of salt right there. If you have that healthy turkey sandwich or tuna sandwich, you have a bit of salt right there. If you have the marinara sauce with the pasta, you have salt there. So you realize that there are so many different ways, without you choosing items that we might clearly associate with a high sodium content, that there are a lot of places that we’re all consuming salt.”

Bibbins-Domingo supports efforts like the one in New York City. There Mayor Michael Bloomburg is urging food manufacturers to reduce the salt in their foods by 25% over the next five years.

Mark Kurlansky thinks it’s a terrible idea. He wrote a book called “Salt.” When laws curb smoking – that’s one thing. But salt is something different:

“You have to deal with the fact that people like salt. There isn’t the moral imperative of cigarettes because there isn’t a problem of second hand salt. If you don’t want to eat salt and the guy at the next table wants to eat it, it’s not going to affect you. It becomes an issue of government messing around with individual choice.”

But most people don’t realize they’re making that choice – there’s just so much salt in all the foods they buy. Other countries, such Finland and England, have worked with food manufacturers to lower salt content. In the UK, they cut sodium in foods by 10-percent. And researchers say the public didn’t even notice. They’re still studying to see if it’s actually improved health.

Some researchers say all that salt is causing a plethora of health problems – and they want the government to force food manufacturers to lower the salt content. Julie Grant reports.

When Dr. Kirsten Bibbins-Domingo sees patients with high blood pressure, she advises them to cut back the on the salt.

She says they often return to the office – happy to announce that they’ve cut out fast food and processed snacks.

“AND THEN I ASK THEM TO TELL ME WHAT THEY’RE EATING AND I AM AWAYS BLOWN AWAY WHEN THEY COME BACK WITH THESE NICE HEALTHY VEGETABLE SOUPS THAT ARE CHOCKED FULL OF SALT. AND SO ALL THE THINGS THAT THEY DON’T REALIZE ARE HIGH IN SALT ARE ACTUALLY STILL THERE IN THEIR DIET.”

Bibbins Domingo is associate professor of medicine and epidemiology at the University of California in San Francisco. She’s also lead author of a recent study published in the New England Journal of Medicine.

Researchers at Stanford and Columbia University Medical Centers co-authored the study.

They did a computer simulation – to see what would happen if every American reduced their salt intake by a half teaspoon a day. That’s 3 grams.

“WHAT WE FOUND THAT IS IF WE WERE ABLE TO REDUCE SALT IN THE U-S DIET BY 3 GRAMS PER DAY, WE WOULD ANTICIPATE 100-THOUSAND FEWER DEATHS EACH YEAR, 100-THOUSAND FEWER HEART ATTACKS, AND MORE THAN 100-THOUSAND FEWER CASES OF NEW HEART DISEASE.”

Bibbins-Domingo says the health savings of reducing salt are comparable to cutting the number of smokers in half.

But not everybody puts that much stock in the new study.

Michael Alderman is a professor of medicine and epidemiology at the Albert Einstein College of Medicine. He says the government shouldn’t act so quickly based on this new study:

“WELL, IT’S INTERESTING THAT IT’S CALLED A STUDY, WHICH I THINK SORT OF SUGGESTS THAT THERE ARE REAL OUTCOMES AND REAL PEOPLE THAT WERE STUDIED. IN FACT, OF COURSE, WHAT IT IS A SIMULATION, A MATHEMATICAL MODELING.”

Alderman says there are lots of different findings when it comes to sodium consumption. And some show reducing salt intake could have actually have negative health effects:

“WE KNOW THAT REDUCING SODIUM INTAKE, BY AN AMOUNT SUFFICIENT TO REDUCE BLOOD PRESSURE, ALSO INCREASES SYMPATHETIC NERVE ACTIVITY, IT INCREASES RESISTANCE TO INSULIN…”

If we already ate low salt diets, the researchers in this latest salt study say those concerns might be valid. But Dr. Bibbins-Domingo says salt consumption in the U.S. is higher than is recommended, and it’s on the rise.

But she says there are high levels of salt in so many foods, it’s hard to avoid. Cereal. Bread. Lunch meat. Pasta Sauce.

And she says consumers can’t really reduce salt consumption without some changes by food manufacturers.

“RIGHT NOW THERE ARE NO CHOICES THAT ARE REALLY AVAILABLE THAT MIGHT BE LOWER IN SALT. I THINK THAT’S WHERE THE EFFORTS WITH THE FOOD MANUFACTURERS ARE ABOUT REALLY MAKING A RANGE OF CHOICES SO WE CAN EAT LOWER SALT, WHICH IS VIRTUALLY IMPOSSIBLE RIGHT NOW.”

Some governments are responding. New York City has already started urging food manufacturers and restaurant chains to lower the salt in their foods by 25-percent over the next five years. Bibbins-Domingo says California is considering salt limits in foods the state buys for schools, prisons and other public institutions.

She also wants the Food and Drug Administration to require food makers to alert consumers when foods are high in salt.

In the meantime, Bibbins-Domingo advises her patients to look at food labels – and really look at the sodium content – so they know what they’re getting.

Lead Bullets and Hunters’ Meat

Tony Hanson has been hunting wild game all of his life. And over the years, he’s
grown pretty attached to what he considers the most cost effective, most efficient
bullet around – a lead bullet.

“It matters a lot to a hunter. You are counting on the range of that bullet. You know
what the bullet can do and you know what the gun will do. You’re out there to take
an animals life, and that’s not something we take lightly.”

The typical bullet used by most hunters is made up of about 65% lead. The bullet is
capped off with a copper jacket. These bullets are designed to handle high speeds and
to kill an animal quickly without breaking apart and sending tiny lead fragments
throughout the meat. Hanson works with the country’s largest conservation group –
Michigan United Conservation Clubs. He says he’s not concerned about possible
lead poisoning.

“Generally speaking, if you make the shot you are supposed to make you’re not
getting any edible meat. It’s not something that really weighs into my thought too
much. ”

Like Hansen, most hunters don’t give lead bullets a second thought. So why worry?

Well, early last spring, food pantries across North Dakota and Minnesota were
advised not to give out donated ground venison. That’s after lab tests revealed tiny
lead fragments in some of the meat.

It generated enough interest that North Dakota launched a study involving some 700
people. The Centers for Disease Control and Prevention worked with North
Dakota’s Health Department. They found that people who ate a lot of wild game
tended to have higher lead levels in their blood than those who ate very little or no
wild game.

The results validated similar research involving California Condors. The Condors
almost went extinct in large part because of lead poisoning. You see, the birds would
feed on gut piles and carcasses left by hunters, and, if those hunters used lead bullets,
the condors would get sick.

That old problem still exists. Lead poisoning remains the number one obstacle
standing in the way of restoring the California Condors.

Rick Watson is the vice president of the Peregrine Fund in Boise, Idaho. He says
they’ve tracked the birds through satellites to see what they feed on. They’ve also
shot deer in the same way a hunter would, using typical lead bullets. The animals
were then x-rayed.

“And we were astounded by the results. Typically out of the 30 or so deer all of them
had fragmented lead bullets in them. And we were also amazed about the actual
extent the lead fragments are sprayed throughout the meat.”

Watson says about 5% of a bullet does break apart and some of it gets into the meat.
He’s now working on another study to see the impact of lead bullets on people.
That’s involved shooting more deer, sending the meat to random processors, and
then running that meat through an x-ray machine. The findings, he says support
what North Dakota discovered late last fall.

“And again what we found that 30% of the packages of meat that came back had at
least one fragment of lead in them.”

Not enough to make a person sick, but enough to raise a red flag. Watson says the
solution is simple. Hunters need to use non-toxic lead bullets. But most hunters
aren’t convinced. So-called green bullets are about twice the cost of lead bullets and
hunters don’t believe they are as efficient.

Hunters say they want independent research done before anybody starts making the
switch to non toxic bullets.

Phasing Out a Teflon Chemical

DuPont says it will phase out a chemical that is

The chemical’s called PFOA or p-foah. An EPA science advisory board
has suggested that PFOA might cause cancer.


The EPA says it’s still deciding whether PFOA poses a significant
health risk. By 2015, the agency wants DuPont to eliminate any chance
of PFOA getting into the environment.


DuPont says it can do that. David Boothe is a global business manager
for DuPont:


“PFOA is present in the blood of the general population and that raises
questions that need to be answered. It’s important to note, though,
that DuPont believes that there are no human health effects known to be
caused by PFOA even though study of the chemical continues.”


Some environmental health activists worry that PFOA fumes emitted when
Teflon pans overheat might be more toxic than anyone is willing to
admit.

in North America. Right now, tests for the disease are done after the animals are dead,
but researchers say they might be getting closer to a test that can be given to live animals.
The GLRC’s Christina Shockley reports on what this might mean in the fight against the disease:


Chronic Wasting Disease, or CWD, causes deer and elk to waste away and die.
The disease is causing hunters and wildlife officials to worry about the
future of the wild deer population. Right now, testing a brain sample from a
dead animal is the sure-fire way to detect the infectious protiens, called prions, that
cause the disease.


Alan Young is a Veterinary Science professor at South Dakota State University.
He’s developing the new test.


“Our ultimate goal is basically to develop a test for infectivity in blood,
by taking a blood sample, and then analyzing for the presence of the infectious prion protein.”


Young says a blood test would let deer and elk farmers know if their herds are
infected before the animals die. He says the research could also lead to a cure for CWD.

problems. A new study suggests your diet can worsen air pollution’s
effects on you. The Great Lakes Radio Consortium’s Michael Leland
has more:


Every time you inhale, you’re breathing in tiny particles from dust, soot
and smoke. They can increase both the plaque buildup in your arteries,
and the risk of a heart attack or stroke.


Now, a study led by Dr. Lung Chi Chen at New York University’s
School of Medicine says a high fat diet combined with bad air led to a
faster buildup of plaque in the arteries of mice. He says that’s because
air pollution affects lipids – fats – in the blood. It changes their
characteristics, or oxidizes them, which leads to more plaque on artery
walls.


“If the mice are fed with high-fat, then the level of the oxidized
lipid will be higher, because they have more lipid in their blood.”


Dr. Chen says arteries of mice on a high-fat diet and breathing dirty air
were 42-percent blocked. Mice breathing clean air had arteries that were
26-percent blocked.


He hopes the study not only encourages people to eat better, but also
persuades the government to toughen air quality standards.

Dupont to Conduct Studies on C-8

But the DuPont Company is going to conduct studies that could solve the mystery as part of a settlement with the U.S. Environmental Protection Agency. The Great Lakes Radio Consortium’s Fred Kight has the story:

going to conduct studies that could solve the mystery as part of a
settlement with the U.S. Environmental Protection Agency. The Great
Lakes Radio Consortium’s Fred Kight has the story:


DuPont spokesman Cliff Webb says the company will spend five million
dollars to investigate the potential breakdown in the environment of C-8,
a key ingredient in Teflon and other non-stick materials.


“We’ll hire independent third parties to serve as a panel administrator for
peer review and consultation, and then the panel will address any specific
activities and findings they see as a result of the study, and the public
will have an opportunity to nominate also a panel member.”


Webb says the three year study will focus on nine chemicals or products
that could release C-8, but he won’t divulge what they are, explaining
they’re confidential business information.


An EPA advisory group has concluded that C-8 is a “likely carcinogen,”
but DuPont disputes that.


Under the settlement agreement, DuPont also must pay a record fine of
more than 10-million dollars for failing to disclose C-8 data to regulators.

The non-stick substance Teflon is made at a DuPont plant near the Ohio-West Virginia border. The groundwater around this area has been contaminated by a chemical used to make Teflon. The chemical is known as C8. Now, 60,000 residents will be tested to find out whether the chemical is harmful to human health. It could end up being the largest public health screening to occur in the United States. The Great Lakes Radio Consortium’s Fred Kight reports:

The testing is just getting underway on people who have been drinking water contaminated by C8.
It’s being done as part of the settlement of a class-action lawsuit against the company.


Residents of nearby water districts accuse the company of witholding information about the health threats posed by C8. Project coordinator Art Maher says medical histories, personal information and blood samples will be collected from the test subjects, who will be paid for their participation.


“That information then will be fed into a database that ultimately will be passed on to the next step of the settlement agreement, which would be the science panel who would interpret the data.”


If the experts determine there is a link between C8 and any disease, DuPont will be required to spend as much as 235 million dollars on a medical monitoring program for additional testing.

Dioxin is implicated in liver problems and cancer. At least twenty-two miles of
the Tittabawassee River floodplain in central Michigan are contaminated
with dioxin from a Dow Chemical plant.


Homeowners said Dow should pay for
ongoing tests to monitor the amount of dioxin in their blood. Now that
the court has ruled against them, floodplain resident Kathy Henry says the
only thing people can do is try to keep more dioxin from getting into their
systems.


“I wear a dust mask when I mow, we don’t eat any of
neighbors’ produce that they offer us that’s grown in the floodplain, and after we mow the lawn or we’re working out in gardens or yard, we come in and throw our clothes in the
laundry right away and jump in the shower to wash it off of us.”


Dow Chemical has commissioned a one-time study to compare dioxin levels in
people who live in the floodplain with levels found among people in another
region.

Health officials are experimenting with another way to gauge the level of mercury in people who eat a lot of fish. The only test sample needed is… hair. The Great Lakes Radio Consortium’s Chuck Quirmbach reports:


Doctors can already test your blood and urine for mercury. Now, as a less invasive technique, some health officials can test the hair near your scalp for the toxic chemical. There’s some debate over the quality of the tests, the lab analyses, and over what a high test reading means. The federal health warning for mercury in hair is one part per million. But that’s for susceptible populations like an unborn fetus.


Jack Spengler is a professor of environmental health at Harvard University. he recently ate a lot of fish and says his hair tested out at 3 parts per million of mercury.


“But I’m not going apoplectic about it because I know if I just watch my consumption, I can moderate that over time… and there’s that safety margin…that I suspect I’d have to be much higher for much longer to really have symptoms. ”

Prolonged high levels of the most toxic form of mercury, methyl mercury can trigger various health problems in adults such as memory loss and cardiovascular damage.
