It’s harvest season – that time of year when farmers are selling cucumbers,
tomatoes and corn for cheap because there’s such bounty. So what do you do
with that kind of surplus? Jennifer Szweda Jordan followed one author’s
advice for preserving:

advice for preserving:


Not long ago, I heard an interview with author Barbara Kingsolver about her
newest book, Animal, Vegetable, Miracle: A Year of Food Life.
Kingsolver and her family spent a year mostly eating foods they’d harvested
on their own or bought from local farms. The idea was to prove to herself
that her family could live well while cutting down the fuel used in food
transportation. In the interview, she mentioned that the family had canning
parties. Well, that was enough to inspire me.


I ordered a half-bushel of tomatoes from a local organic farmer and headed
to Ann Murray’s house. Ann’s a friend and co-worker whose family used to
can:


“I have to tell you what my father says of canning, he says: eat what you can, what
you can’t, can, and it’s so true.”


As a kid in rural West Virginia, Ann was the shucker of corn and the snipper
of beans. She never had a leading role at the pressure cooker – that tightly
sealed pot with the frightening capacity to explode if handled incorrectly.
Like me, the friends who joined us, Robin Hewlett and Matt Willard don’t
know much about canning either.


For canning instruction we turn to the 1964 edition of The Joy of Cooking.
Check out the language in this book: “Good organization and proper
equipment simplify canning and give you, with a minimum of effort, gay-
looking shelves of glistening, jewel-like jars… all labeled and dated and
ready to use.”


Matt recalls a similar book from his childhood:


“My mom had the Betty Crocker cookbook from like 1965 and they had like
explicit pictures of the process and I always found it really intriguing to read
through that ’cause I was like, I live in NYC, no one cans here. That was so
far from my mind. I’m thinking of some person in Wyoming on a farm like
actually still canning… But now it’s coming full circle, it’s great.”


Not many people think much about canning these days. But the process has
a rich history. Learning to preserve food this way actually helped Napoleon
win wars. Now canning has made its way into Ann Murray’s kitchen, where
we’re waiting for a pot of water to boil. We’ve scalded, and skinned our
tomatoes. Now we lay out our plan for organization that Joy of Cooking
promises will leave us with glistening jars:

Anyway, what do we know? We try to get the right amount of tomatoes in
the jar – not too much so they’ll explode, but not so little that we’re mostly
packing water.


We submerge eight quarts into boiling water and wait what seems like a very
long 45 minutes. Ann throws us a bone to keep us going:


“They’re lookin’ beautiful, guys. Lookin like my mother’s cupboard.”


Since Ann’s the only one with actual canning memories, we’re all ears:


“I just remember it being really hot outside, incredibly hot, steamy in the kitchen. I felt like my mom was sacrificing a little so
we could have canned stuff. But it was always so great to open it up in the
middle of the winter.”


At the end of six hours, we only have 12 quarts of tomato jars to show for it.
I’m a little disappointed because I wish we could’ve been more efficient. I
mean, it’s a good thing we’re not in the French military, right, because we, like,
seriously couldn’t survive on this:


(Hewlett:) ” I feel like the sitting around and the canning is part of the social canning party
aspect.”


They eventually had me convinced that we were productive enough. Until I
did some searches on the internet about canning parties. In a 1918 book
called Use Your Government: What Your Government Does For
You
, there are tables listing teams of Kansas canners and their output.
If I read correctly, Mrs. P.W. Rieger, aided by 17-year-old Bernadette
Rieger, canned 622 and one half quarts of fruit, vegetables, soups and meats.


Wow, I wonder if I’m too old to join 4-H?

My Uncle Mark has run a fishing guide service for twenty-nine years. He
floats down the Potomac River in a 14-foot aluminum raft that he
designed. He goes through Harper’s Ferry, West Virginia, where the
Potomac and Shenandoah Rivers come together near the Blue Ridge
Mountains. My uncle says that for him, the thrill of fishing dates back
to his childhood in Michigan:


“You know, when I first started, it was like I’m going to catch fish
and as a little kid I liked to ride back home from the Detroit River
with a stringer across the handlebars of my bicycle, I was the great
hunter or great fisherman. And we took turns as buddies bringing fish
home on their bikes.”


I don’t get to see my uncle a whole lot. But when I was little, he took
my cousin and me fishing. He made us kiss the first fish that we
caught. Which was kind of silly and fun.


“Oh, you always kiss your first fish. Twenty-five years ago I had some
younger anglers in my boat. And one of them caught a fish and he gave it
a kiss and let it go and I looked at him and then I caught a fish I
think a little bit later and I didn’t kiss it and he goes, ‘What are
you doing?’ and I said, ‘Well, what do you mean?’ And he goes, ‘Oh, you
have to kiss your first fish.’ And I just said, ‘Well, that makes a lot
of sense.’ I think it sets the tone for the day.”


When you hold a fish up to your face and look closely at its glistening
scales and you kiss it, you definitely feel close to it.


“I fish a lot and I hardly ever kill any fish anymore. And in fishing
it’s really the most genteel of the blood sports. You know, you have all
the pleasures of the hunt but you don’t have to make the kill.”


When my uncle talks about nature, he gets this blissed-out look on his
face.


“The water colors can vary from, you know, coffee with cream if it’s
really been a lot of rain and it’s all stirred up to where it’s a
relative clear nice green to it. It can sometimes look like a trout
stream where it’s like gin-clear, you know. It depends on rainfall and the
time of year and stuff. And I love flowing water. ‘Cause it’s always
changing and it’s moving you. Especially when you wade in it. It runs
between your legs and it’s just, you feel like you’re a part of it.”


Some people talk about nature in spiritual terms. That’s something I
never talked about with my uncle but I wondered.


“Oh, it’s probably as spiritual as I get. Yeah, I think sometimes,
sure. You get a lot of respect for nature. And I guess um, spiritual quality…um, yeah. When you really try
to embrace the whole environment and you’re taking in all the flora and
fauna, you’re taking in all the trees and the aquatic vegetation and the
insects that live in that environment and then all the, all the
creatures that live in the environment, plus the fish I might be
pursuing and stuff and then how all that works together. And then how people impact that
too, and I always feel like, I never feel like I’m in control. I always feel like there’s a lot of
variables. I have an idea of what I’m doing but I never feel that I am
like I’m in control. And so I guess there’s a spiritual quality to
that. Got a lot of respect for nature. Got a lot of respect for water.
Flowing water especially.”


The way my uncle talks about the water and the words he uses really
paints a vivid picture in my head. I can hear the love in his voice.
When he talks like that, I feel closer to the places and the fish he’s
talking about. And hearing how he really feels makes me feel closer to
him.

Lax Mercury Regulation Revealed

A chlorine manufacturing plant is discharging mercury at the highest rate of any industrial plant in the nation. A state agency is trying to get the plant to reduce the pollution. The GLRC’s Fred Kight has the story:

industrial plant in the nation. A state agency is trying to get the plant to reduce the

The PPG Industries plant has dumped as much as 32 pounds of mercury a year into the
Ohio River. Mercury is a toxic chemical that causes nerve damage in humans. West
Virginia’s Environmental Quality Board found that state regulators had allowed PPG to
dump mercury in amounts many times the legal limit.


Margaret Janes is with the Appalachian Center for the Economy and the Environment.
She praised the decision against the plant:


“They’re using a technology that is from the 1800s. There are other cleaner technologies available.”


The plant reportedly is one of only nine in the country that makes chlorine by pumping
saltwater through vats of pure mercury. PPG Industries says it will appeal the West
Virginia ruling.

Each spring when college students leave their dorms, they leave behind tons of unwanted furniture, rugs, and other stuff that just didn’t make the cut for the trip back home. At one time, it all would’ve ended up in a landfill. In recent years, some universities have been sorting out the usable items and holding huge yard sales. The GLRC’s Jennifer Szweda Jordan took her pocketbook and her microphone to one of those big sales:

it all would’ve ended up in a landfill. In recent years, some universities have been sorting out the
usable items and holding huge yard sales. The GLRC’s Jennifer Szweda Jordan took her

“Welcome to the fifth annual Trash to Treasure sale. Let the excitement begin.”


At 7:30 a.m., the gates to Beaver football stadium at Penn State are hoisted and thousands of
people run through six metal corrals. It’s a mad dash for CD players, stuffed animals, and other
remnants of college. Sixty-six tons… of stuff. What’s with kids leaving behind all this, and that
$215 chichi bronze silk purse – with tag intact?


“No one wants to take it home. I mean to fit all that stuff in a car – it’s awful. It’s really hard to
do. So I mean if you can’t fit it you might as well leave it and leave it for somebody else.”


Erin Horning is a college student herself. She’s here for the fourth year in a row.


“I was a freshman in college this past year so I came here to get all my college stuff from the
students that already left like irons, and oh, furniture….”


Penn State’s Environmental Strategies Team started the Trash to Treasure sale to keep leftover
lumber and coffee mugs out of the waste stream. Other major colleges around the country are
following suit, including Notre Dame and West Virginia University. Penn State spokesman Paul
D. Ruskin says it also saves the school 43-hundred dollars in hauling costs.

“We had a problem. We had 60 to 70 tons of usable material left behind. And the solution which
we found was to have this massive sale and to have the items donated to this sale. And to have
United Way take over and manage the sale.”


The charity brings in 300 volunteers who sort sale items over a few weeks. Bethany Heim
volunteered for 19 shifts. She and her husband are also first in line for the sale, having arriving
around midnight.

“I came for a vacuum. It started as a joke when I started volunteering here three weeks ago.
And now I found THE vacuum.”

Heim says that besides keeping trash out of landfills, the sale benefits the community in other
ways.


“They have stuff put away for Katrina victims. I’m sure some of it will make its way to the flood
victims in New England. And just that it’s not on the sides of the streets – ’cause driving
through town when you see all the furniture from the college kids on the sides of the streets.”


Penn State tries to bring more customers in every year. The school’s Paul D. Ruskin admits that
the county market for box fans has already been saturated. So now it’s trying to generate
enthusiasm with gimmicks. Like this year’s attempt to break the record for the most people
wearing Groucho Marx masks. The effort fell 138 people shy. Still, the United Way netted 45,000 dollars. And as for Bethany Heim…


“I got my vacuum!”


And with happy customers like that, universities are starting to realize that selling all the college
student leftovers is good P.R. as well as just good sense.

that filled dorms often become trash, but a number of schools are turning stadiums into sale

When college lets out, dumpsters get overwhelmed with tons of students’ belongings, but not at
a few major universities. Five years ago, Penn State started getting students to donate their
goods. The school invited the local United Way to sort area rugs and shoes, to run a sale and
to reap the profits. Notre Dame and West Virginia University followed suit.


Paul D. Ruskin is a Penn State spokesman.


“It is a solution that has no downside. It keeps things out of the landfill. It keeps down Penn
State operating costs. It makes nice items available to families at a good price. And it helps a
charitable organization.”


It’s also a big draw. More than five-thousand people attended Penn State’s event this year.
Other universities are reporting similar turnouts.

Dupont Pledges to Cut Back on Controversial Chemical

The makers of the non-stick coating Teflon say they’re going to reduce the amount of a
chemical that’s causing health concerns. The chemical is used in the manufacturing
process. The Great Lakes Radio Consortium’s Fred Kight reports:


The DuPont Company says the output of the chemical known as C8 will be cut by 90
percent by the end of next year. The chemical giant had agreed to the action in a deal
with the U.S. Environmental Protection Agency, which is studying whether C8 poses
health risks to humans.


DuPont continues to argue that C8 is not harmful.


Just a few weeks ago, a judge okayed the settlement of a class action lawsuit in which the
company consented to pay at least 107 million dollars to resolve contamination claims by
residents living near one of its plants in West Virginia.


A local water district official welcomes the C8 cut but says he wishes they had done it 20
years ago. And an official with the organization Environmental Working Group
complains the plan did not go far enough and would not eliminate exposure
to the chemical.

The makers of Teflon could have to pay out more than 440 million dollars as the result of a
recently settled water contamination lawsuit. The Great Lakes Radio Consortium’s Fred Kight
has the story:


The DuPont company was sued in a class action lawsuit filed on behalf of 80-thousand residents
whose drinking water contains trace amounts of a chemical known as C8. The chemical is used
to make Teflon… and manufactured at a plant near Parkersburg, West Virginia.


DuPont officials say C8 does not pose any health risk but Joe Kiger isn’t so sure. Kiger was the
lead plaintiff in the case. He says the most important part of the settlement is an independent
medical study that will be done to determine if C8 can make people sick…


“I’m concerned about my health as well as my familiy’s health, my wife’s and the people in the
community because this is a major thing.”


DuPont will have to pay 107 million dollars for the study, new treatment equipment for local
water utilities and legal fees and expenses for the residents who sued. It could have to pay
another 235 million for environmental clean up and health monitoring if C8 is found to be toxic.

But Marathon-Ashland’s proposal has sparked opposition from environmentalists and some small business owners in Southeast Ohio who fear possible contamination of waterways and disruption of some pristine areas. The Great Lakes Radio Consortium’s Tom Borgerding has the story:

A Findlay, Ohio based Oil Company says it needs a new petroleum pipeline to help get gasoline and jet fuel products to market in the Great Lakes states. But, Marathon-Ashland’s proposal has sparked opposition from environmentalists and some small business owners in Southeast Ohio who fear possible contamination of waterways and disruption of some pristine areas. The Great Lakes Radio Consortium’s Tom Borgerding reports.


The proposed 149-mile long pipeline will cross the Ohio River from Kenova, West Virginia and snake through parts of the Wayne National Forest and scenic Hocking Hills in Southeastern Ohio and South Central Ohio. Company spokesman Tim Aydt says the project will help stabilize gasoline prices in a region stretching from eastern Illinois to western New York.


“The existing pipeline infrastructure that serves us today is decades old and it was designed when there was only one grade of gasoline and one grade of diesel fuel. And it was designed to serve a population about half the size it is today. Over time, with the growth we’ve had in the Midwest we’ve outgrown that pipeline capacity and as a result we’ve witnessed the last two summers where we’ve had constrained supply that’s resulted in price spikes.”


The pipeline might help stabilize gasoline prices in the region by adding a second source of supply for refined petroleum products. Currently, The Great Lakes region is dependent solely on pipelines running out of refineries in the Gulf Coast states such as Louisiana and Texas. But, Marathon-Ashland’s proposal also presents a potential environmental risk. The pipeline will cross 363 streams, 55 wetlands, and parts of three watersheds. For some, the prospect of a pipeline carrying gasoline and jet fuel through environmentally sensitive areas has sparked fears. Jane Ann Ellis is a founder and trustee of Crane Hollow…. a privately owned, dedicated state nature preserve in the path of the pipeline.


“If this pipeline would be built and if there was any kind of leak this would decimate the clean water that we have. It is easier to keep your drinking water clean than it is to clean it up afterwards. And it’s cheaper in the long run for the general public.”


Michael Daniels also opposes Marathon-Ashland’s project. He owns a country inn that attracts tourists from Ohio and surrounding states. He says many of his customers come to the region to hear chirping birds, babbling brooks, and to see the fall foliage. Daniels says both construction and operation of the pipeline will have a negative effect on his business.


“Certainly! Who would want to come as a tourist and be exposed to that kind of noise and intrusion into their experience? So, there’s no question that it will impact my business.”


But company spokesman Tim Aydt says the pipeline route through parts of a national forest and other environmentally sensitive areas is the best possible route.


“We wanted to avoid population centers. We wanted to avoid residential or commercial developments and we wanted to avoid flood plains where we could. So, when all of that was put into the mix we came up with the best route overall. Obviously it’s not the cheapest route because it’s not a straight line between two points. But, about 80 percent of the route follows existing utility corridors or those areas that are less prone to development.”


Marathon-Ashland says without the pipeline the Great Lakes could soon face shortages of gasoline, lines at the pump and greater fluctuations in gas prices. The tension between the company and pipeline opponents turns on the question of whether Marathon-Ashland will be required to submit an “environmental impact statement.” The U.S. Army Corps of Engineers is expected to make that decision early this year following a recommendation from the Ohio Environmental Protection Agency. Corps spokesman Steve Wright says there’s no question such a requirement will delay the project.


“That will take longer. You know they take varying lengths of time but certainly they can’t be done very quickly.”


Marathon-Ashland contends an environmental impact statement (EIS) is unnecessary. But, opponents of the plan say the EIS is critical since the pipeline puts so many streams and wetlands at risk for potential pollution.

Ironically, the clouds are a by-product of a 200-million dollar system installed in May to help curb smog-producing emissions from the General James M. Gavin Power Plant. The search for a solution is being watched by other power plants in the U.S. that have to comply with stricter anti-smog regulations put in place by the federal government.

Blue clouds of sulfuric acid have descended upon towns in south-eastern Ohio and West Virginia more than a dozen times since may. The clouds are from smoke stacks at American Electric Powers General John M. Gavin plant in rural Cheshire, Ohio. It’s one of the largest coal-burning power plants in North America. The company blames a new 200-million dollar pollution control system for releasing more toxic emissions. If they’re right, other midwestern power companies may face similar troubles when trying to comply with federal clean air laws. The great lakes radio consortium’s Natalie Walston reports.


The small, rundown airport in Mt. Pleasant sits on a flat part of the hills of West Virginia.
It’s surrounded by thick trees. Its rural enough here that it’s common to see wild turkeys dashing across the runways. One summer afternoon airport manager Ben Roush looked out his window. But instead of seeing a plane land … he saw thick smoke clinging to the tops of the trees.


“It looked like, uh, exhaust out of a car or something like that. It wasn’t black smoke it was blue. Very, very visible.”


After the smoke appeared, his phone began to ring.


“The fire department down here called up here and wanted to know if we had a fire up here because it was all in these … it settled to the ground. And, it was in those trees.”


The clouds contain high concentrations of sulfuric acid. That’s not normal … even this close to a power plant that burns coal with a high sulfur content. For years, most coal-burning power plants have had pollution control devices called “scrubbers” to deal with that sulfur. The scrubbers do just what the name implies – they scrub the air clean of sulfur dioxide as well as some other pollutants. But, they don’t do a good job in removing nitrous oxide. Nitrous oxide is blamed in part for causing acid rain and smog.


Paul Chodak is manager of American Electric Power’s Optimization Group. He says AEP installed a selective catalytic reduction system … or SCR … in an effort to remove nitrous oxide. Chodak says the SCR system is a relatively new technology. And, so far, it and the scrubber aren’t working well together. That’s because they are combining to make sulfuric acid, but in a different form. And that form then gets released into the air.

“The SO3 … or sulfuric acid is in very fine droplets … sub-micron size droplets. Very, very tiny. And they’re so small that they travel through the scrubber and they’re not removed. So, the scrubber works very well on the gas in removing SO2. However, it’s not very effective in removing SO3.”


Chodak says this is all because of an effort to reduce emissions that cause acid rain and smog in eastern seaboard states. But… as AEP scrambles to stop polluting the air hundreds of miles away … people who live beneath the smoke stacks claim their health is being sacrificed. They say that in the summer, when the sulfuric acid clouds move in it’s difficult to breathe.

Gallipolis is a small city five miles south of the power plant. Today there’s a small crowd of people gathered at Sunny’s bar and grille. People here will only give their first names to an out of town reporter. A man named Steve is drinking a beer at a table with his sister. He says fallout from the plant makes the paint peel off cars.


“All that acid and stuff goes on these cars. They gotta repaint the cars … so you know it’s tearin’ us up. Our bodies. And, like I say, we worry about our kids and grandkids more. We’re old enough that it’s not gonna bother us no more.”


His sister Tammy drags slowly on a cigarette as Steve talks.


When he finishes, she jumps in to say that since the blue clouds started showing up, everyone in town has become sick.


“I have health problems. I cough all the time. Allergies all the time. Allergies to something’. Runny nose. Constantly. You know, I think everyone in town has health problems that live around here.”


But AEP claims the air is cleaner than it was before the SCR system was installed. Paul Chodak says the air turned blue this summer because the sulfuric acid reacted with sunlight on hot, humid days. He says people become scared because they could actually see what they were breathing.


“The hard thing for people to understand is that what is coming out of the stack is significantly cleaner than what was coming out before. This is an improvement from a pollution control perspective. However, it has created this local phenomena that is a problem. And, AEP is moving to address that and we will solve it.”


Sulfuric acid measurements taken by the company and examined by Ohio and U.S. EPA researchers meanwhile don’t show a major sulfuric acid problem. But there are no state standards in place in Ohio for levels of gaseous sulfuric acid in the air.


Kay Gilmer of the Ohio EPA says emissions from AEP have exceeded sulfuric acid standards set by other states. However, she says people near the plant stacks aren’t in immediate danger. But she hesitates to say the air is perfectly safe to breathe.


“We didn’t have anything that would um … that we would … that we looked at that was exceptionally high. But, that was, I don’t want to say that to say we’re not concerned with the problem.”


Meanwhile, people near the plant say they’re tired of having their health jeopardized so people far away from them can breathe easier. They are working with state environmental groups to possibly fight the power plant in court.
