Organic Farmers Look for New Recruits

Organic food has become so popular, it’s hard to keep up with demand. For organic farmers, that booming market is a mixed blessing. When they can’t supply as much as the customers want, it puts pressure on the farmers. Some farmers are trying creative ways to fill the demand. The Great Lakes Radio Consortium’s Stephanie Hemphill reports:

When they can’t supply as much as the customers want, it puts pressure on the farmers. Some farmers are trying creative ways to fill the demand. The Great Lakes Radio Consortium’s Stephanie Hemphill reports:


About a year ago, chef Kirk Bratrud and his family built a small restaurant near the harbor in Superior, Wisconsin. It’s called The Boathouse, and it features fresh-caught fish, local vegetables, and — Scottish Highland beef.


“It’s a very lean but tender piece of meat, it has a slightly peppery flavor, something approaching elk but more like beef.”


Bratrud says his customers love Scottish Highland beef.


“Our problem with beef however is that we wish more of it was available.”


He has to take it off the menu when he runs out. It’s hard to find, and the only way he can get it at all is because three farmers in the area raise it. One of them is Doug Anderson, owner of Beaver Creek Ranch. He says Highlands offer plenty of advantages to a farmer.


“There is no waste in the animal, as the fat is on the back of the animal rather than a heavy marbling. And our animals are not grained at all. We don’t even have a feedlot. When we’re ready to take an animal to processing, it will just be picked out of the herd, put in a trailer, and go for processing.”


The animals graze in pastures. They don’t need the antibiotics that are routinely fed to animals in feedlots. Anderson has nearly 50 Highlands. The herd is growing, but it takes time to raise cattle. About 20 steers are ready for market each year.


When he started selling to The Boathouse in Superior, he realized there was a bigger market out there than he could supply. He’s recruiting his neighbors to help out. Three nearby farmers have bought brood cows and bulls. Anderson says when their animals are ready to butcher, he’ll put them in touch with The Boathouse and his other markets.


Three miles away, another organic farm has a different specialty – aged cheese made from sheep milk. Mary and David Falk milk about 100 sheep, and make about four dozen cheeses a week. The aging cave is a concrete silo, built into a hillside.

Inside, it’s dark and cool. Nearly a thousand cheeses are resting on cedar planks. Mary Falk enjoys the different molds growing on the rinds of the cheese.


“We’ve got a gold mold, there’s a mauve colored mold, there’s a blue mold, there’s a soft green. So each one of those little molds adds a a hint of flavor and complexity to the cheese.”


The Falks used to sell their Love Tree cheeses to restaurants in New York and San Francisco. But after September 11th, the orders dropped off suddenly, and the Falks found new customers at a local farmer’s market. Now, they don’t have enough cheese to satisfy their local retail customers AND supply restaurants and cheese shops.


To boost her production, Mary Falk tried buying sheep milk from other farmers, but it didn’t taste the same as milk from the flock on her Love Tree Farm. So she tried to recruit farmers to buy some of her sheep and sell her the milk. A couple of neighbors tried it, but quit after awhile.


Her latest idea is what she calls the Love Tree Farm extended label program.


“What Love Tree is known for is our grass-based milk. And if somebody is making a high quality cheese on their farm, we are willing to put that into our market for them. We would put the Lovetree label on their cheese, like “Love Tree introducing Johnny Smith.”


Falk says it would give customers a chance to learn about new cheeses from a name they trust, and it would give new farmers access to an established market.


It takes time and ingenuity to match producers and consumers. But more and more people want organic food. Farmers who’ve been successful are trying to recruit other farmers to join them in the organic producers movement… an effort that can be profitable and easier on the environment.

Alright… this is a story for the guys. I mean, you women might be interested, but this is really a guy thing. They’re taking the flush away from us. You’ve probably noticed that urinals have been changing from manual flush to some kind of automatic or motion-detecting sensor flush. Now a few companies are producing urinals with no handle, no button, no sensor. Companies such as Sloan Valve Company, Waterless Company and Falcon Waterfree Technologies are making urinals without flushers.


Bruce Fleisher is the Vice President of Sales and Marketing for Falcon Waterfree Technologies.


Fleisher: “Literally there is zero water consumption with the use of this urinal product.”


Graham: “Well how do you flush it?”


Fleisher: “Well, in fact, it’s the no-flush urinal.”


No flush. No water. The urine just goes down the drain, past a sealant and it’s trapped there. All the no-water urinal companies use similar technology.


“Because it’s a dry surface, that prevents the urine from breeding bacteria rather quickly. And, as a result, you have no odor.”


Hold it. What did he just say?

“And, as a result, you have no odor.”


Now, I couldn’t let that one go… so I asked Mr. Fleisher to explain how that works.


“The odor that people would typically experience in a urinal derives from the combination of the urine and the water creating a breeding ground for bacteria. Bacteria then generates ammonia gas. Ammonia gas is what most people are picking up. That’s what smells.”


I remember from some high school science class that urine, when it’s expelled, is sterile. So, it kinda makes sense. But hey, this guy’s in charge of sales. So I called up a nephrologist. Nephrologists study kidneys so they know something about urine. Dr. Akinolu Ojo is the director of nephrology outpatient services at the University of Michigan. He explained why urine smells.


Ojo: “The odor that one gets from the urine comes from exposure to atmospheric air and water moisture. As that happens there is decomposition of some of the compounds in the urine. One of the by-products is ammonia. And so you get at that point an ammonia smell.”


Graham: “So, this mixture with water, it becomes a better breeding ground for bacteria?”


Ojo: “That’s correct.”


Graham: “And then the chemical reaction in addition to that also could cause some odor?”


Ojo: “You are correct.”


Glad we got that cleared up. In fact, when I went to see the Assistant Manager of the Physical Plant and Maintenance Services at Michigan State Univesity, Jim Fashbaugh said an odor problem with flush urinals is what prompted that univeristy’s first experiment with no-flush urinals.


“We’d heard about the waterless urinals. We thought we’d give them a chance to see how they would work. And we installed it and it took care of the odor problem, but we also realized we were saving water at that point, so we thought we’d take a look at other applications.”


So, they had one installed in the bathroom in the building where the top maintenance guys work.

We took a peek at it.


Fashbaugh: “It’s one of the first ones that we ended up trying out. That’s basically it.”


Graham: “It looks like it’s broken, like there’s-”


(sound of laughing)


Fashbaugh: “Yeah. As you see, there’s no flush valve. There’s no- anything else happning. It just goes down through the ports there and there’s a blue liquid that allows the urine to go through and it separates it out. Frankly, we have hard water here at MSU; we’ve got those deep water wells. And it eliminates that lime buildup and whatever that we had to clean up before. So it saves us on products to have to do that issue too.”


Fashbaugh says the janitors love them. Instead of disinfectant, water and a lot of scrubbing, it’s more of a spray and wipe procedure. The no-flush, no-water urinals have been around in Europe for a long time, and they became popular in the drier areas of the American Southwest a few years ago. Now, universities, stadiums, and airports among others all across the country are installing them.

Scientists Speak Out Against Bush Administration

A group of prominent American scientists, including 10 Nobel prize-winners, will bring a campaign against the Bush Administration to key battleground states in the region. The political advocacy group formed last week is called Scientists and Engineers for
Change. Stanford University professor Douglas Osheroff is a member. He won the Nobel
Prize for physics in 1996. He says the Bush Administration is compromising scientific integrity.


“Having scientists reporting to middle-level bureaucrats who simply don’t have the background
to assess what the scientists are saying and he, of course, has essentially put a gag order
on scientists that are paid by the government directly. They are really not free to say what
they want.”


Osheroff also says President Bush and Vice President Cheney’s ties to the oil industry have
led them to minimize evidence of climate change.


Members of the Scientists and Engineers for Change will speak in Battleground states
like Michigan, Ohio, and Pennsylvania this month.


The group has no direct ties to Senator John Kerry’s campaign. The Bush campaign hasn’t
responded to the group’s claims.

The gathering is known as the State of the Lakes Ecosystem Conference. And as the Great Lakes Radio Consortium’s Mark Brush reports, the group says there’s good news about the amount of forestland in the region:

Ecosystem Conference. And as the Great Lakes Radio Consortium’s Mark Brush
reports, the group says there’s good news about the amount of forestland in
the region:


The report prepared for this year’s conference says there is more forestland
in the Great Lakes Basin when comparing recent data to data collected more than
a decade ago. The report’s authors say forestland now covers a little over half
of the basin’s total land.


Constance Carpenter is with the U.S. Forest Service. She helped develop the report.
She says forests are crucial to maintaining the environmental health of the Lakes.


“They do a lot of things in terms of water quality. They’re able to provide conditions
that really contribute to watershed health in terms of, you know, moderating flood peaks,
storing water, filtering pollutants, transforming chemicals, all those things.”


Carpenter says one of the reasons forestland is increasing is because fewer people are
farming. She says as people leave behind fields and pasturelands, those lands often
convert back to forestland. The authors caution that their data did not look at whether
these forests are near lakes and streams, where their influence on the overall health of
the Lakes is greatest.

Work to Begin at First Great Lakes Legacy Act Site

The U.S. Environmental Protection Agency has announced that it’s beginning the first clean-up project under the Great Lakes Legacy Act. The EPA and the state of Michigan will spend 6.5 million dollars to clean up the Black
Lagoon on the Detroit River. The area was given its name when aerial pictures showed oil
and grease swirling in the lagoon. The project is the first that will take place under the
new Great Lakes Legacy Act. EPA administrator Mike Leavitt says plans to build a new housing
development nearby played a role in making the Black Lagoon project a priority.


“The most important thing is the where we can make the biggest difference and the fastest.
Because there is a good plan in place that will not just improve the environment, but also
boost the economy, that’s so much the better.”


The EPA says about 90 thousand cubic yards of sediment contaminated with oil, mercury, and
PCBs will be dredged from the Black Lagoon. The agency says the project should begin
in mid-October and be completed by mid-January.

The largest meat and poultry processing plants in the country now must follow new
rules regarding how much pollution they release into waterways. The Great Lakes Radio
Consortium’s Tom Weber reports:


The new rules apply to about 170 plants in the country that turn cows and chickens into
hamburgers or filets. Wastes will have to contain fewer nutrients like ammonia and nitrogen
before it’s released into water. Mary Smith heads a division within the Water Office of the
Environmental Protection Agency. She says the rules are not as strict as when first proposed.
That’s in part because of concerns from the industries that it would cost too much. Smith
says the limits are tougher than what the law was before. But she adds these aren’t the only
industries that release waste into the water.


“So we can’t really kind of single out the meat industry, necessarily. Everyone, in a sense,
needs to do their part. But it’s another piece of the puzzle in terms of getting cleaner water.”


The new rules mark the first time poultry plants will have these kinds of limits. The EPA
estimates meat and poultry plants use 150 billion gallons of water each year. That water needs
to be cleaned of wastes like manure, blood, and feathers before it’s discharged.

Report: Renewable Energy Can Kickstart Job Growth

A new report says a national renewable energy policy could create thousands of new

The report by the Union of Concerned Scientists urges Congress to adopt a policy
requiring 20 percent of the nation’s energy to be produced using renewable sources
by the year 2020. Those sources could be wind, solar, or geothermal energy. The report
says such a policy could create thousands of new jobs in manufacturing, construction and
maintenance.


Jeff Deyette is an energy analyst with the Union of Concerned Scientists. He says
rural communities – especially farmers – could be the biggest winners under the proposal.


“Farmers that were chosen to have wind power facilities sited on their land could get up
to as much as $4,000 per turbine to lease on their property.”


Deyette says a national renewable energy standard could save consumers nearly 50 billion
dollars by 2020. He says that’s because increased competition from renewables would help
lower the demand and the price of natural gas.

Clear-Cut Demonstration Angers Forest’s Neighbors

Most forests in the Great Lakes region are privately owned. That concerns the U.S.
Forest Service because the agency says many forest owners don’t know how to properly
manage their woodlands. The Great Lakes Radio Consortium’s Julie Grant reports that a
new education project that demonstrates tree-harvesting techniques has angered some residents:

Workers are cutting down trees in a fifty-year-old pine crop. At the same time, state
foresters are leading a botanist, a private tree farmer, and a reporter through this forest
education site. One of the foresters, Rick Miller, is directing the chain saws to show what
needs to be cut for what’s called a “crop tree release.”


“This one here we selected out with the orange flags, the trees that show the best form and
dominance in the crown. They have a nice big healthy crown. And then what we’re doing is removing
any trees that are touching the crowns of those ones that are orange, and just opening it up
to give the crown more room up there to spread out and possibly increase their growth and their
vigor.”


A forest owner who wants to make money off his pine stand might do a crop tree release to
improve the quality of the remaining timber. The bigger the tree, the more money it’s worth
to a logging company.


Heading deeper in, a crop of pine trees lined up like soldiers trails to our right, and wilder
hardwoods shade us from the left. There are signs to demarcate different timbering techniques:
improvement cut, understory removal, selective cut. Project manager Frank Corona stops at one
section of oaks, maples and cherries.


“You have small trees, medium trees, some larger trees. Trees are probably selectively
harvested in here and you have all different ages of trees in this stand…”


The cool shaded path abruptly opens up. The lush canopy is replaced by harsh sunlight.


GRANT: “Oh wow, so this is the clear-cut…”


CORONA: “This is the clear-cut.”


The forest is gone… cut to the ground. All that remains are the 120 hardwood stumps on
the torn-up dirt. Botanist Steve McKee suports construction of the demonstration site.
But he also loves trees.


GRANT: “What do you think when you see that clear-cut?”


MCKEE: “Well, clear-cuts are never pretty, ya know? So, uh, I think the most shocking thing
for me is I’ve walked in this my whole life and it was surprising. But I knew it
was coming too, so…”


But some people in the community say they didn’t know the demonstration project would include
clear-cutting older trees. Anne McCormack hikes the Mohican nearly every day, clearing trails,
cleaning garbage, or enjoying the woods. The education site has been roped off from the public
during construction. But she found out there was a clear-cut demonstration in an old growth
section of the forest.


“So, I just was… I was just shocked. I mean I can’t say anything more. I just felt
terrible for… I felt terrible for the trees that stood there since before white settlers
were even in Mohican. And there they just were bulldozed and chain cut for education.
I mean, it doesn’t add up.”


McCormack’s not the only one who’s upset. A lot of people didn’t realize this is what
the Forest Service had in mind. Back at the clear-cut site, Corona says many trees suffer
from disease when they mature to 120 years. He says it’s a good age for private land owners
to consider the clear-cut option.


“This was a time where before they would rot out or anything and we see more damage, more
susceptibility health-wise in the entire stand, we could make a harvest in here and utilize
those trees and start this whole new cycle of growth in here.”


The foresters and forest owners say clear-cutting is a viable option, and just one of the
many examples at the demonstration project in the Mohican forest.


Tree farmer Scott Galloway says people need to understand that owning a forest is another
form of family farming. For instance, he got a call recently from a man who inherited 30
acres and needed money right away. He doesn’t know how to manage his tree crop.


“Where does he go? How do you make the right decisions quickly? The faster he can make
decisions, in his lifetime with his forest, the sooner he’ll be able to enjoy the benefits
of those decisions. It’s all about forestry, wildlife, natural resources. So the more education he
can get, the better those decisions will be and the better off all of us are environmentally because of it.”


The Forest Service says a demonstration project is needed because forest acreage is getting
cut up into smaller and smaller parcels. That means the forests are owned by more and more
people who need to know how to manage their timber. The Forest Service hopes this project
will help them make better decisions.

The image of the wolf has always had a powerful effect on people. Wolves seem dangerous,
mysterious, romantic. They are a symbol of the untamed wilderness. Before Europeans came
to America, wolves roamed freely on every part of the continent. In 1630, the colony of
Massachussetts Bay started paying bounties to settlers for killing wolves. Over the next
300 years, wolf killing spread across the country, until all that was left was a few small
pockets of surviving wolf packs.


When the Endangered Species Act passed in 1973, the only wolves left to protect in the
Midwest were in Northern Minnesota. By some estimates, there were as few as 350 of them.


Today, Minnesota has a healthy wolf population of around 2400 animals, and smaller populations
are growing in Wisconsin and Michigan. Becaue of this success, the U.S. Fish and Wildlife Service
has proposed removing the animals from the Endangered Species List. This would mean wolves would
no longer be federally protected – it would be up to the states.

Peggy Callagan works with captive wolves at the Wildlife Science Center in Minnesota. She’s the
Center’s co-founder and executive director. She and her staff research ways to minimize
conflicts between wolves and people. Callahan is looking forward to seeing the wolf taken off
the Endangered Species List.


“It’s a good thing for the Endangered Species Act, to take a wolf off or an eagle off or a
peregrine off when it has recovered. The act was not established to provide a permanent
hiding place. It was established to protect a species until such time that they could be
managed in a different way.”


Wisconsin and Michigan have wolves because young born in Minnesota have migrated east to start
their own packs. Callahan says how Minnesota manages its wolves will affect wolf numbers in the
Midwest. And she isn’t crazy about Minnesota’s current wolf management plan, which has different
rules for different parts of the state.


“Now, there’s a boundary; there’s a boundary called a wolf zone, and there’s a boundary that’s
called the ag zone. And nobody likes it. We went backward.”


In Northeastern Minnesota, where the majority of wolves are, landowners can only kill wolves
if they can demonstrate an immediate threat to pets or livestock. In the rest of the state, where
there is more agriculture and more people, the rules are more lenient. On their own property,
landowners can kill any wolf they feel is a danger, without having to prove anything to the state.


The Sierra Club is opposed to taking the wolf off the Endangered Species list, largely because
of Minnesota’s management plan. Ginny Yinling is the chair of the Wolf Task Force of the Sierra
Club in Minnesota.


“They’ve pretty much given carte blanche to landowners, or their agents, to kill wolves
pretty much at any time in the southern and western two thirds of the state; they don’t even
have to have an excuse, if a wolf’s on their property they can kill it. Instead of this being
what should have been a victory in terms of wolf recovery and the success of the Endangered
Species Act, instead we’re afraid it’s going to turn into something of a disaster.”


Yinling is also concerned with the protection of wolf habitat, such as den sites, rendezvous
sites, and migration corridors.


“The current management plan protects none of those areas; it leaves it entirely up to the
discretion of the land managers.”


But wildlife managers say these are not critical for a large wolf population
like Minnesota’s. Mike DonCarlos is the wildlife program manager for the Minnesota
Department of Natural Resources.


“As you look at the range of species that are threatened by habitat change, ironically the wolf
in Minnesota is not one of them. As long as there’s a prey base that continues, wolves should
do just fine. The key is mortality rates and availability of food.”


In Wisconsin and Michigan, where there are fewer wolves, state laws will continue to protect
wolf habitat. Peggy Callahan says she has faith that the wolves will be fine, even if the
Minnesota state plan is not perfect. But at the Sierra Club, Ginny Yinling says they have
plans to challenge wolf delisting in court.
