doubled in the United States. That’s causing concern that too much of the
country’s corn crop is being taken out of food production. The Great
Lakes Radio Consortium’s Erin Toner reports:


Demand for ethanol is increasing as more states start requiring the corn-
based fuel to be blended with gasoline, and Congress has required that
the amount of renewable fuel used in the U.S. triple in the next six years.


Keith Collins is chief economist for the USDA. He’s says he’s not
worried about a food shortage. He says there were record corn crops in
2004 and 2005, and there’s 35 million acres of cropland in reserve in the
U.S.


“Some of that has to stay there because its environmentally fragile land,
but some of it could come out if demand for food goes up, and demand
for fuel goes up. I think we have a very strong resource natural resource
base that can produce a lot more agricultural commodities, both for food
and for fuel.”


Overproduction has kept corn prices as low as they were in the 1950s,
but Collins expects corn to get more expensive over the next few years as
ethanol production increases.

United States. Most of the shrimp Americans eat is produced in
Southeast Asia, India, Mexico and Brazil. Russ Allen wants to change
that. He’s opened one of the world’s few indoor shrimp farms in the
Midwest. Allen says his operation meets an obvious market demand, is
good for the environment, and presents a new economic opportunity for
the country. The Great Lakes Radio Consortium’s Erin Toner reports:


In a big blue barn in Russ Allen’s backyard, there are thousands of
shrimp… beady-eyed, bacteria-munching, bottom-feeders.


Here, the life cycle of the shrimp starts in the breeding center, where
two big tanks of water mimic a place 150 feet deep off the shore of the
ocean where the water quality and temperature are stable. Allen says
it’s the perfect environment for shrimp to mate.


“Like in just about all animals the male chases the female, and they do a
little courtship dance, and then the male will deposit a spermatophore on
the female and when she spawns, the eggs pass through the
spermatophore, are fertilized and then go out into the water.”


A few months later, the shrimp end up in the production room where all
they do is eat, and sometimes, if they get excited or spooked, they jump
right out of their tanks.


“They don’t like light…”


“Oh (laughing)! Do you ever have them hit you as you’re standing
here?”


“Oh yeah, that’s why we have the nets up so they don’t jump.”


Russ Allen has been farming shrimp for three decades. He started in
Ecuador, and then went to Belize, where he started the country’s first
shrimp farms.


Allen and his wife moved back to Michigan in 1990, when he started
designing his indoor shrimp farm. It finally opened for business about a
year ago, and now, he’s selling all the shrimp he produces.

Allen says his indoor shrimp farm is one of the first of its kind in the
world. There’s no waste leaving his farm, so pollution’s not an issue,
and because there’s no water coming in or going out, there’s no danger
of introducing diseases into his system.


Allen says an indoor farm also moves shrimp farming away from fragile
coastal ecosystems. That’s where most of the industry has developed
around the world.


“In a place like the United States with all the development on the
coastline and land costs, you can’t really do it anywhere near the ocean
anyway. So, if you’re going to have a viable shrimp farming system in
the United States, you need to move it away from – you know – these coastal areas.”


But indoor farms haven’t always been a viable option, either.


In the 1980s, a handful of them opened in the U.S., including a big one in
Chicago. They all failed because the technology didn’t work quite right,
and because the cost of production made them unable to compete with
outdoor farms.


Bill More is a shrimp farming consultant and vice president of the
Aquaculture Certification Council. He says now, indoor shrimp farmers
have a better chance of making a go of it.


“Coming from third-world countries, there’s been a lot of issues with
illegal antibiotics being found in shrimp. There’s been environmental
and social issues that environmentalists have come down hard upon. It’s
sort of prompted the opportunity for a good indoor system where
you could manage those and you didn’t challenge the environment.”


But More says creating and maintaining a clean, organic indoor shrimp
farm is still very expensive, and it seems an even bigger problem now
that the price of shrimp is the lowest it’s been in a decade.


Shrimp farmer Russ Allen says he’s invested several million dollars in
his business. He’s the only guy in the game right now, which he
admits is good for business, but he doesn’t want it that way. He says
he’d like to see the industry grow in Michigan, and throughout the
country.


“In order to do that the government has got to be a partner in this, and
that has been the challenge… that when you don’t have an industry, you
don’t have lobbyists and nobody listens to you and you can’t get an
industry until they do listen to you. So, that’s been our real challenge
right now.”


Allen says he wants the government to offer tax breaks and other
financial assistance to the aquaculture industry like it does to other
sectors of the economy, but he says he can’t even get some local elected
officials to come and see his shrimp farm. He says with so many
companies moving jobs and factories overseas, he thinks government
leaders should be looking for ways to help new and perhaps
unconventional industries like his, grow.

We’ve been bringing you stories about Ten Threats to the Great Lakes. On today’s report, the
Great Lakes Radio Consortium’s Lester Graham introduces us to a story about how farmers are
getting involved in restoring some of the natural landscape:


One of the Ten Threats is the loss of wetlands. A lot of the wetlands of the Great Lakes were
turned into cropland – farmland. But before farmers could work the fields in the nation’s bread
basket, they first had to drain them. So thousands of miles of ditches and trenches were dug to
move water off the land. Losing millions of acres of wetlands meant losing nature’s water filter
for the lakes. Reporter Mark Brush reports… these days some farmers are restoring those wet
places:


We’re standing in the middle of a newly-harvested corn field in northwest Ohio. This area used
to be wet. It was part of the old Black Swamp – one of the biggest wetland areas in the country.
The Swamp stretched 120 miles across northwest Ohio and into Indiana. It filtered a lot of water
that eventually made its way into Lake Erie. And it provided habitat for all kinds of wildlife.


Today, the Black Swamp is gone… It was drained and turned into farmland.


“Is it o.k. to go?”


“Yeah, go.”

Lynn Davis and his crew are cutting a trench into the earth. The trench is about a half a mile
long and five feet deep. Workers trail behind the machine feeding black, plastic pipe into the
trench.


The underground pipe will drain excess water to a nearby ditch.


Davis says these drains help the farmer grow more crops. It’s a common practice that’s been
going on for more than a hundred years. Farmers can get their machines onto the field sooner,
which makes for a longer growing season. And crops grow better when their roots aren’t wet.


Years ago, wetlands were considered a bad thing – places that stood in the way of farmland
development – and places where diseases spread.


The federal government actually paid people to drain them. And by the end of the 20th century
more than 170,000 square miles of wetlands were drained.


Lynn Davis’s family has been in this business for close to a hundred years. Davis admits that his
family helped drain the Black Swamp. But he says much of what’s been done can be reversed:


“You know, there is no question that this was of course one of the largest natural wetlands in the
country. And what we’re doing here was responsible for eliminating that wetland. Now what
we’ve done is relatively simple to reverse. If for some reason it was decided that we don’t want to
farm and live in this area any more, why we can put it back to a swamp real quick.”


And some of that is happening today.


Instead of paying people to drain wetlands, the federal government pays people to restore them.

We’ve driven about fifty miles north to where Bill Daub lives. He was hired by the U.S. Fish and
Wildlife service to find suitable land for restoration. And he’s restored well over 500 wetland
areas in the fifteen years he’s been doing it.


Daub says nature bounces back. He says every time he’s broken an old drainage pipe, dormant
seeds of wetland plants stored in the soil popped open:


“What’s amazing with the wetlands is that you see all these cattails, and wetland plants growing
in here – that stuff was in a seed bank, even though they were growing corn here, there was a seed
bank of wetlands species, waiting for water.”


The federal government will pay a farmer to take marginal cropland out of production under the
Wetlands Reserve Program. And Daub says it’s worth the money:


“Every one of these wetlands is a purification system. The water that finally leaves this wetland
has been purified through the living organisms in the wetland.”

Janet Kaufman lives just down the road from Bill Daub, and eight years ago, she had a crew dig
up an old drainage pipe on her farm. These days, on the back end of her property there’s a pond
with a tall willow tree draping over the water:


“So this wasn’t here before?”


“Not at all, not at all! I mean it’s just shocking. And when the backhoe hit that it was like a
geyser, the water just poured out it just flew up in the air. They had to crunch it shut. I mean the
quantity of water that flows underground is unbelievable unless by chance you see it like that.”


Kaufman says a lot of her neighbors have been signing up to restore wetlands on their property.
The wetter areas aren’t that good for crops… and with the government offering money to let
nature take its course… it makes financial sense for the farmers.


But because a lot of the old Black Swamp area is good for farming, it’s not likely that we’ll see
huge swaths returned to wetlands.


But even the restoration of a fraction of the wetlands will help improve the health of the Great
Lakes.

Critics claim the system of using special gasoline blends to reduce air
pollution has led to sizable price hikes when production problems reduce
supplies of the so-called boutique fuels.


The energy legislation would allow the temporary lifting of cleaner fuel mandates during supply disruptions. The EPA would also limit the number of boutique fuels and look for ways to
make the blends more widely available.


Wisconsin Republican House Member Paul Ryan says the new plan will bring stability.


“So we can standardize our gasoline blends, maintain our clean air standards, but stabilize the supply of gasoline.”


Ryan admits it may take several years for motorists to see any savings. Democrats worried about air pollution and oil companies concerned about additional regulations have traditionally blocked changes in the fuel supply system, but with gas prices around two fifty a gallon, the federal
government is taking action.

jobs. Researchers say states with large numbers of autoworkers
could be hurt the most. We have more from the Great Lakes Radio
Consortium’s Michael Leland:


Sales of gasoline-electric hybrids amounted to less than one-percent of all
the vehicles sold in the U.S. last year. But researchers at the University
of Michigan’s Transportation Research Institute say hybrids, and vehicles
made with advanced diesel powertrains, could make up eleven percent of total
sales by 2009.


If that happens, the Institute projects it could cost the
U.S. about 200-thousand jobs. Pat Hammett directed the study. He says that
figure includes both actual jobs lost and new jobs not created.


“A lot of the hybrid components, for example, actually are new componentry
inside a vehicle. So, it isn’t necessarily that you are losing jobs in some
of that area, it could just be an example of not getting the growth.”


Hammett says auto-producing states like Michigan, Ohio and Indiana would be
affected more than others. The report says states could reduce jobs lost to
new technologies by offering tax credits to encourage production in the
United States.

Harvesting the Wind (Part 1)

Wind farms of huge turbines are springing up along coastlines,
windy ridges and blustery farmland. Most of us see them from a distance.
The Great Lakes Radio Consortium’s Chris Lehman recently visited some
of them up close… and has the first of two reports on wind energy:

Lehman recently visited some of them up close… and has the first of two reports on
wind energy…


If you can imagine the sight… there are 63 wind turbines scattered across the
prairie farmland,
their huge blades sweeping around, capturing energy from the wind. Each turbine is
213 feet
high. You can see them from miles around. But it isn’t until you stand directly
underneath the
80-foot long blades as they rotate in the wind that you begin to appreciate their size…

“This is probably a typical day. They’re probably producing at about 30 percent of
what they are
rated at, and probably on average, for a year, this is what you’d expect.”


Christopher Moore is Director of Development for Navitas Energy. The Minnesota- based
company opened the Mendota Hills Wind Farm in northern Illinois just over a year ago.


Q: “What are some of the highest levels that you’ve reached?”


“Each turbine is capable of producing 800 kw, and there are times when we’ve had the
windfarm
working at about maximum.”


Moore says the Mendota Hills Wind Farm produces enough electricity to power about 15-
thousand homes per year. It’s the first wind farm in the state of Illinois.


Brian Lammers is a Project Manager for Navitas Energy. He says the location is
ideal since it’s
windy here nearly all year long…


“The wind here is more robust in the fall, winter and spring. So we have more
production during
those months than we do during June, July, August.”


Unfortunately, the summer months are the months that most often experience peak
demand for
electricity. Because of that, and because it takes so many windmills to generate
lower amounts of
power, it’s unlikely that current wind energy will completely replace fossil fuel
generated power.

On the flat prairies of Illinois, the giant turbines are the tallest structures for
miles around. You
begin to wonder about things like lightning strikes…


“We might have experienced one or two last year. The turbines are protected from
lightning. The
entire wind farm is grounded, so if there is a strike typically it will just be
grounded down to the
ground grid. There’s typically no long-term damage associated with a lightning
strike. But as you
can imagine, they’re the tallest structures around so there are periodic lightning
strikes.”


Q “What about a tornado? This is tornado country…what would happen if one came
through
here?”


“I don’t know. These turbines are built to withstand everything but a direct strike
from a tornado,
so I think the same thing would happen to a wind turbine that would happen to any
large
structure if they were struck by a tornado. You’d probably have some significant
damage.”

Inside the turbine, there’s a distinct hum as the blades whirl away at the top of
the hollow shaft.
It’s about ten feet across at the base, and a metal ladder allows anyone brave
enough to climb all
the way to the top.


Despite the hum of the turbine’s blades up close, the sound fades away just a few
dozen feet from
the tower. But noise isn’t much of a concern for this wind farm. It’s in the
middle of a soybean
field and there are no neighbors nearby.


Noise is just one of the aesthetic concerns for neighbors of wind farms. Appearance
is another.
The Mendota Hills turbines are coated with a special paint that appears white in
bright sunshine.
But when the sun’s not out, the turbines appear grey, and seem to blend in with the
cloud-covered
sky.


Dennis Cradduck has 19 of the turbines on his corn and soybean farm. He says the
wind farm
hasn’t been a problem. Of course, he’s getting paid by Navitas for allowing the
turbines on his
land. But he says the wind farm has led to an unexpected benefit: getting to meet
people from
across the country who pull off the highway for a closer look…


“We get people almost on a daily basis that drive by on the interstate and see them,
and stop and
want to look at them, and they’re amazed at them, and most—about 99 percent of them
have been
positive comments. In fact, one fellow from North Carolina stopped the other day
and said ‘I wish
we’d build more of these around the country because we need renewable energy.'”


The prospect of more renewable energy is appealing to most environmentalists. But
some worry
that wind farms can be deadly to birds. A study by the National Wind Coordinating
Committee
found that wind turbines kill an average of two birds per year.


Another concern is that windmills disrupt the scenery. But the only view around
here is farmland
as far as the eye can see. And on this brisk day, it isn’t just corn and soybeans
being harvested: it’s
the power of wind.

Now, a report from the National Environmental Trust says that decision
is hurting American businesses. The Great Lakes Radio Consortium’s

work out the next steps in dealing with climate change. Seven years
ago, many nations agreed to reduce fossil fuel emissions and
greenhouse gases. The U.S. didn’t agree to reduce its emissions.
Now a report from the National Environmental Trust says that
decision is hurting American businesses. The Great Lakes Radio
Consortium’s Stephanie Hemphill reports:


Mike LeBeau installs wind generators and photovoltaic solar
collectors. His business, Conservation Technologies, is in Duluth,
Minnesota. In the U.S., there are not a lot of contractors doing this
kind of work.


“This is a two and a half kilowatt photovoltaic system.”


Two panels about the size of a dining room table stand on the top
floor of a downtown garage. The only other equipment is an inverter
– a metal box the size of a shoebox – that transforms the direct
current from the solar panels to the alternating current we use in our
homes.


“The electricity is produced here by the sun, fed into the wiring in the
building here, and any excess is distributed out onto the utility grid.”


The solar panels were made in Japan. And the inverter is from
Germany.


LeBeau has been installing systems like this for ten years. Demand
was slow until a year ago, when Minnesota started a rebate program.
LeBeau has put in more generators this year than in the last ten
years combined.


With another rebate offered by the local utility, LeBeau says the cost
of installing a typical system can be cut nearly in half.


And he says the increased activity has persuaded some of the
naysayers to help rather than hinder renewable energy projects.


“Now the electrical inspectors don’t have any choice – it’s being
supported by the utilities, and by the state of Minnesota, so it’s really
changed the atmosphere and the climate that we work in.”


But LeBeau says the state rebate program is a drop in the bucket
compared to what’s being done in other countries.


Christopher Reed agrees. He’s an engineer who advises individuals
and businesses on renewable energy projects. He says U.S. policy
has been piecemeal and erratic. For instance, there’s a federal tax
credit for renewable energy production. But it’s only in place for a
year or two at a time.


“When the incentive is out there, everybody ramps up as fast as they
can, and we slam projects in to meet the deadline before the credit
expires, and then everybody sits until the credit gets reintroduced
again. This has happened three times now.”


Reed says that discourages long-term investment.


Reed’s business is one of several American firms studied for the
report from the National Environmental Trust. The report says Japan
and most countries in Europe are providing major and consistent
incentives to encourage production of renewable energy. The report
says this approach is saving money, creating jobs, and putting
businesses in a position to export their new technologies and
expertise.


Reed says he’s frustrated to see European and Japanese companies
thrive, using American inventions such as photovoltaic, or PV,
technology, while American manufacturers fail.


“It’s almost embarrassing. The PV technology, that came out of Bell
Labs in the U.S. We should be the world leaders.”


But some observers say the worry is overblown. Darren McKinney is
a spokesman for the National Association of Manufacturers. He says
the U.S. has nothing to fear from German or Japanese businesses.
He says fossil fuels are doing a good job of stoking the American
economy.


“The fact of the matter is that wind and solar and biomass and
geothermal simply aren’t ready for prime time. If someone wants to
make an argument ‘well, they could be ready for prime time if they
received x-amount of tax cuts,’ I won’t necessarily argue against that
because I don’t know enough about the technologies. What I do
know is it would be cutting off our nose to spite our energy face if we
turn our backs on fossil fuels.”


Right now, oil and natural gas get the lion’s share of federal subsidies
in the U.S. Subsidies for renewable energy sources are very small in
comparison. As other countries shift to new technologies, American
companies could be left behind.

Epa to Lift Termite Pesticide Ban?

The U.S. Environmental Protection Agency is considering
extending the use of a pesticide that the agency once decided was
not safe around children. The Great Lakes Radio Consortium’s

The pesticide Dursban is sprayed on the ground during construction to protect new
homes from
termites. Four years ago, the EPA and Dow had agreed to phase out that use of the
pesticide by
the end of this year. Exposure to children was considered risky. Now, the EPA is
reportedly
considering lifting the ban. Jay Feldman heads up the environmental group Beyond
Pesticides.
Feldman says this would be like testing the safety of Dursban on humans without their
knowledge…


“They really should stop production, then stop use, do all the studies they want to
do with full
public disclosure and then revisit the issue. Not retain the use, allow people
unknowingly to be
exposed and then obviously put children at serious risk.”


In a report in The Washington Post, a Dow spokesperson indicated using new EPA
computer modeling, Dursban now “falls within an acceptable range” of federal
guidelines.

Tree Farmer Makes Season Merrier

It’s that time of year again – parking lots across the country are filled with Christmas trees. Just about one out of every three people who celebrate Christmas buys a live tree. The Great Lakes Radio Consortium’s Mark Brush spent some time with one tree grower in the height of tree-selling season:

It’s a crisp afternoon at this Christmas tree lot. That generator you hear is powering the electric saws. The guys trim up the base of the tree so it’ll fit on a tree stand. Their hands are all blackened with sap and dirt from wrestling hundreds of trees off of the flat bed truck. They take the bundled trees, open them up, and stick them onto stands. They’ve created a makeshift forest in the middle of this strip mall parking lot. Customers wander through the forest searching for the perfect tree.

Duke Wagatha runs this tree lot in southeastern Michigan. He appears with his trees each year from his farm up north.


“We get here the weekend before Thanksgiving. Takes us probably about a week, or five days to set up. With the idea of opening the day after Thanksgiving. We like to let folks get one holiday out of the way and then we start on the next…”


He calls his business “Flat-Snoots Trees.” You couldn’t tell from looking at his face now, but he calls it “Flat-Snoots” to make light of a broken nose he suffered in high school.


Duke’s coveralls are all tarnished with pine needles and sap. And when he moves, you hear ringing from the bells on his hat. He moves between the trees in his parking lot forest telling his customers jokes and filling their heads with visions of Scotch Pine, Fraser Firs, and Blue Spruce.


Margaret Jahnke has been buying trees from Duke for more than six years.


“He just makes it really personable – and there was one year, it was really kind of warm and he had his Hawaiian shirt on and his straw hat, and he was out here partyin’ away! And I’m like, ‘Whoa!’ It’s fun to come… you know just to run in… you know to talk to him. And they’re really helpful!”


While they’re away from home, Duke and his crew live in a 1950’s vintage trailer. The trailer’s paint is faded, but Duke spruces it up for the holidays with wreaths and pine boughs. And when you step inside, the old lamps and rustic furniture make it seem as if you’ve stepped back in time.

“Whooo! It feels better in here doesn’t it? I needed a good excuse to get in here.”


The trailer also doubles as his office. Customers pay for their trees in here, and on occasion, they’ll have a complimentary nip of what Duke calls his “bad Schnapps.” Duke is from Mesick, a small rural town in northern Michigan. Christmas tree farming is big business in Michigan. The state is second only to Oregon in the number of acres that are in Christmas tree production.


Duke calls himself a small-time grower. He’s a carpenter by trade, but his work tends to dry up in the long winter months.


“It’s not enough to make a living for me and my family year-round, but it’s a good extra source of income… and, uh… winters are tough up there, so if you make a little bit of extra money – winters are tough and expensive. Living in the country, you know, like anybody, you got propane bills and all that, and it’s a little colder up there, so to make a little bit of money going into winter is pretty nice.”


A lot of work went into growing the trees that are now on his lot. Each summer, workers plod through the rows and rows of trees, swinging razor sharp machetes. They trim each tree to give them that classic, symmetrical, Christmas tree shape. And after about ten years, the trees are ready for harvest. They’re cut, they’re run through a baling machine, and they’re loaded onto trucks and shipped down to the lots.

Even though there’s a jovial atmosphere on the lot, there’s also a sense of urgency. After all, Duke only has a few weeks to sell trees that in many cases have taken more than ten years to grow. And while selling the trees is an important part of Duke’s income, he gets something else out of it. He enjoys making connections with the people who wander through his tree lot.


“Sometimes you get grumpy folks coming in, and it’s usually just because they’re overwhelmed with shopping… it’s cold out… they didn’t wear their long underwear or whatever… but we can usually get them turned around, you know, we have a little fun with them… like I say if we have to bring them to the trailer and have a shot of bad Schnapps with ’em, hey, that’s just fine too.”


It’s closing time at the tree lot. The workers are headed for a warmer space. Right now, Duke’s trailer is filled with his extended family and friends…

“Come on in! This is Duke’s family… it’s warm in here, huh?”


Duke will continue to sell his trees right up until Christmas Eve. Then, he’ll drive home to spend a few days with his family before he comes back to tear the lot down.


“It’s kind of like the circus coming to town. You build up your tree lot, you almost build like, well, I wouldn’t say a village, but a little spot where there was nothing, just, you know, an asphalt parking lot. And when we leave, there’s nothing left – we sweep ‘er up and go – so it’s almost like a mirage… were those guys really here?”

And so, they spring to their trucks and drive out of sight, knowing they’ve helped make the season merry night after night.

Each year, Americans spend tens of billions of
dollars on diets and diet aids. Low carbohydrate
diets like South Beach, the Zone, and Atkins are all
becoming household words and companies are
scrambling to cash in. As part of an ongoing series
called “Your Choice, Your Planet,” the Great Lakes
Radio Consortium’s David Hammond looks in the
mirror as he investigates the potential
environmental impacts of the low-carb diet:

Every day it’s the same. As I wait for the shower to
warm up, I fight off an assault on my self-esteem.
First, there’s my naked reflection in the bathroom
mirror. (Ugh.) To my right, a stack of clothes that
don’t fit anymore. And in front of me, the most
damning thing of all… the bathroom scale.


I know I should ignore it, but its pull is irresistible.


Hammond: “Okay, here comes the big
moment of truth. Ohh… you gotta be kidding
me. Well, according to my scale, I am four pounds
heavier than yesterday. I don’t know how
that can be possible.”


You see, I’m fat. Not “oversized.” Not “full-figured.” Fat. I weigh 268 lbs and desperately need
to lose some weight. None of my clothes fit. My
cholesterol is through the roof. And my wife? Well, she
seems to have cornered the market on migraine
headaches.

But what kind of diet? I needed a diet that would
work within my lifestyle, not totally change it.
Because giving up meat wasn’t an option for me, I
figured low-carb was the way to go.


A recent Roper Report estimated that up to 40
million Americans were reducing their
carbohydrates.


40 million carb counters can’t be wrong, can they?


My gut told me that low-carb dieters must be
demanding more meat and poultry. But
was there an environmental impact?


For advice, I turned to the Sierra Club. They have a
program focused on concentrated animal feeding
operations — better known as factory
farms. These are operations where thousands of animals,
sometimes tens of thousands, are housed
together in relatively small spaces.


Environmentalists say the problem is their manure.
So much of it is produced, in such a small area that
simply spreading it on nearby fields can lead to
severe water pollution.


Anne Woiwode is the Director of the Sierra Club’s
office in Lansing, MI. She said that manure is not
the only problem. A bigger threat may be the
antibiotics that the animals are given to promote
their growth.


“Up to 70% of the antibiotics used in
this country right now are being fed to animals so
that they are fattened quickly. And because
animals are consuming so many antibiotics, you
are actually creating super bugs or super
bacteria.”


As far as my diet is concerned, with all this talk
about manure, bacteria, and super bugs, I wasn’t
sure that I needed to diet after all. I’d pretty much
lost my appetite.


Well, almost… it is still barbeque season after
all.


What I need is a low-carb fix that I can feel good
about. A local butcher mentioned Roseland Farm.
It’s located in southwest Michigan, near the Indiana border.
They’re one of the region’s largest, certified organic
farms. It’s a family farm. Merrill Clark is one of
the owners.


“We’re a 1,800 acre certified organic beef farm, we also
raise some grains and other garden vegetables on
a smaller scale but we are mostly known for our
beef. We’ve been, I’ll say certified organic, for
nearly 20 years.”


Certified organic means that Clark and her family
feed their cattle with crops grown without pesticides
or synthetic fertilizers. They also don’t give their
cattle antibiotics or growth hormones.


Nearly a quarter of their farm is devoted to grazing,
so the Clarks avoid the manure problems of factory
farms. They just leave the manure where it drops
and it becomes natural fertilizer.


Natural grazing also reduces the need to feed the
cattle grains like corn and soybeans. When used for
cattle feed, those grains are usually inefficient and
expensive to produce.


Even though the Clark family runs a large organic
farm, they know that in the scheme of things, they are still very small.
Merrill Clark says that’s fine.


“If some major Kroger or Meijer’s wanted to buy all of our
meat, I don’t think we would want to. We sort of
feel connected to our label and our own name and
our identity. It’s just so interesting this way. You
meet great people. Because you’re face to face with
your own customers.”


In my case, Merrill and I didn’t actually meet face-
to-face, but we bonded. We talked long after the
interview was over. And I was impressed enough to buy
a 35-lb cooler full of ground sirloin, strips, and
fillets. Enough to get me through those first few
weeks of my diet.


So even though I’m still fat, and tomorrow, the
bathroom scale was going to be just as unforgiving,
I’m starting to feel a little bit better about myself. For
the first time, I feel connected to my food. I feel a
bond to the farmer. And I feel like I was supporting
something worthwhile. And you know what, it
feels good.
