Food Deserts in the City (Part 1)

Most of us don’t have to think too much if we
want fresh fruits, vegetables and other foods. We
drive to the supermarket or farmers’ market and find
whatever we’re looking to buy. But for many people
living in the inner city, it can be tough to find
fresh foods. Julie Grant reports that can lead to
health problems:

Neighbors having been counting down the days for this store to
open. The bright lights, the shiny floors, 217,000-square feet
of retail and grocery. This Wal-Mart Supercenter offers produce
bins overflowing with dark leafy kale, imported plantains, and a
rainbow of green, yellow and red apples. Mother of two Dionne
Smith says she’s glad it’s here:


“I was looking at the prices. I mean because I was looking at this. In a regular store that’s
like 2 dollars 79 cents. Here it’s a dollar-fifty. So it’s
pretty good.”


“You’re looking at the Velveeta Mac n’ Cheese?”


“Mmm hmm.”


This Wal-mart is located on the south edge of Cleveland. It’s
part of the first new shopping center in the city limits in
decades. But it’s close to the suburbs. Not an easy trip from most
of the low income neighborhoods to the northeast – places where
it’s tough to find fresh foods.


In this poorer area, a lot of people who come to see dietitian
Cheri Collier have problems with diabetes, heart disease and
obesity. Collier says the health center opened adjacent to a
supermarket a few years ago. She planned to show people
firsthand how to improve their diets:


“I was very excited about the idea of having grocery store nearby.
Because I felt it was easier to teach people how to shop by having live
models. Taking you into the grocery store, showing which aisles have the appropriate foods, how to pick food labels, how to shop based on
what’s available for you in the area that you’re living.”


But it didn’t work out. Just six months after the health center
opened, the supermarket closed.


Today Collier looks around at what’s left on the food landscape near her health center:


“We got a couple of beverage stores, check cashing stores. Might
have beverages or food, and snacks in there. We’ve got
McDonald’s, Burger King, Subway, KFC. Those are the main
things we see right away… Lot of stuff you can get that’s
quick. And you have United Convenient Market, has a lot of convenience-type foods. Some snacks, and some alcohol of course, and some pops and beverages. The two grocery stores we had in the area
are closed down.”


Collier takes us to what’s now called the “grocery store” in this
neighborhood. You can buy milk here. And cereal. Juice. But
there is no produce aisle. No fresh fruits or vegetables. Only
canned vegetables. No fresh meat. Collier picks up a can of
something called “potted meat” – and says this is the kind of
food that can lead to her clients’ health problems:


“It has chicken. Pork skin. And that’s my concern because that
skin is high in fat and that’s what giving them a lot of extra
cholesterol and saturated fat. So not only a person may think
they’re getting chicken, they’re actually getting chicken with pork
fat all over it. So it’s not the healthiest option.”


Collier tries to educate her clients about the high fat and salt
content in potted meats, processed boxed foods, and even many
canned vegetables. She says people on limited incomes buy these
foods because that’s what’s available:


“Someone just said earlier, ‘Because I’m in the neighborhood
and I can get to that store and get what I need.’ So to them it’s
like, I can get more of these and still have money left over to
buy something else I want.”


That’s one reason why stores sell cheap processed foods in poor
inner city neighborhoods, while the supermarkets with fresh foods
close down.


Getting quality produce often depends on the wealth of your neighborhood. Researchers have found that again and again. Dr.
Ana Diez-Roux is with the University of Michigan:


“It’s like a vicious cycle. Stores offer what people want to
buy, but people can only buy what the stores offer. So it
becomes a self-perpetuating cycle.”


And Diez-Roux says without supermarkets or other ways to get
fresh produce and meats, certain people will face more health
problems:


“In particular, healthy food options are less available in poor
and minority neighborhoods then they are in wealthy and white
neighborhoods.”


Diez-Roux says that’s one reason poor neighborhoods have higher rates
of diabetes, obesity, and cardiovascular disease. She says
public policy is starting to address this problem in two ways: by
educating consumers and providing incentives to stores to carry
healthier foods in poor neighborhoods.


But progress is slow. Eating habits are hard to change. And
stores don’t want to stock perishables that don’t sell.

Tapping Into Real Maple Syrup

In some parts of the country, it’s time to tap maple trees to make
syrup. Lester Graham went out to see how it’s done and conducted a
little taste test to see whether real maple syrup stands up to the name
brands you find at the grocery store:

brands you find at the grocery store:


This story started out to be just a little walk in the woods to see
what all the fuss was about. Tapping sap from maples seems like a
quaint old-fashioned idea. After all, doesn’t syrup come from the
grocery store?


Well, anyway, Tom Jameson straightened me out about that. Early in the morning
he led the way through the woods until he found one of the maples he
wanted to tap. First, he drilled a small hole, then drove the tap – or
spline – into the tree:


“We are using an old bit and brace to drill a hole about a half in diameter and an inch and a half to two inches deep. Okay, now I need to just clean that whole little bit. I’ll be ready to drive in the tap, using a hammer to tap it into place. And, already the sap is beginning to run out.”


And that’s it. Sap started dripping right away into a covered bucket
hanging from the tap, or spline.

It takes a long time to get enough sap, and you need a lot of sap:


“Well, especially with these red maples, you’d need at least 40 gallons
to make one gallon of syrup.”


“So, if you’re doing it commercially, absolutely you want to stick to
sugar maples or hard maples. For the backyard guy that wants to try it,
any maple will work.”


You just have to boil it down sap from soft maples like the red maple
for a lot longer because there’s more water in the sap. And boiling down 40
gallons down to get one gallon of syrup takes a long time, like a good part of a
day or longer.


Jameson says for a lot of people, this is a family event. Empty the
buckets of sap into a big pan over an open fire and keep it boiling. And
a lot of the time you sit around listening to a favorite uncle tell
stories between nips of a flask that keeps getting passed around.


Jameson says it’s a good time, and worth the time spent because real
maple syrup is so good. Well, at least some people think it’s really
good. Jameson admits it’s not what some folks expect:


“Young people that have been raised on the grocery product sometimes
they don’t even like the real thing because it just tastes different to
them. It doesn’t have the extra butter in it or whatever it is. It’s
an acquired taste.”


With that in mind, we decided to do a little taste test. I got some
waffles, some real maple syrup, then three name brand grocery store
syrups… and just to throw everyone a curve, some dark corn syrup.
Then, we got five volunteers at the Environment Report headquaters.
Now, I’ll let you in on a little secret, the real maple syrup was
sample number three.


(Taster 1:)”Three is disgusting. I wouldn’t feed it to anyone. Awww,
gawd!”


(Taster 2:) “Three and four both have sort of a smoky flavor to them
which makes me think maybe it was boiled over a wood fire.”


(Taster 3:) “I think one, I think one is definitely store-bought, but
it’s really good. If two is the maple syrup, I’m really disappointed
because it’s awful. I hate it.”


(Taster 4:) “I chose three as the real one.”


(Taster 1:) “Three? If three is the real one, oh, my goodness.”


(Taster 4:) “I know. But, we’re so used to the imitation. And that’s
maybe why we don’t like it, because it is so real in flavor.”


(Taster 1:) “I’m hoping that two is the real one.”


Number two… was the corn syrup. Four of the five volunteers did guess
that number three was the real maple syrup, but none of them liked it
much.


Tom Jameson says a lot of people wouldn’t have anything but real maple
syrup. And a lot of people really enjoy going out to see
demonstrations of tapping trees for the sap and to watch the sap boil
and boil for hours and hours:


“Well, I think it’s a tie back to the good old days. And when people
can kind of make a connection to back to the way things used to be,
there’s something comforting about that.”


So, every year a lot of folks head out into the woods, hauling buckets
and drills and splines, and take advantage of what they think is one of
nature’s sweetest gifts.

But the amount of meat being produced in the U.S. continues to increase.
So livestock farms haven’t exactly disappeared. They’ve just gotten bigger.
In the third part of our week-long series, the GLRC’s Mark Brush reports these big operations have kept food costs down, but those cheap prices come with consequences:

So livestock farms haven’t exactly disappeared. They’ve just gotten bigger.
In the third part of our week-long series, the GLRC’s Mark Brush reports these big operations have kept food costs down, but those cheap prices come
with consequences:


When you picture a typical farm, chances are you probably think of a farm just like Frank
Baffi’s.

He grows corn and oats on his land. He’s got chickens, a couple of horses, two ducks,
about 30 beef cows. And in this fading red barn, he’s got pigs:

“Hey Pig! C’mon! Get up!”

In fact, the pigs have been the most profitable thing he’s raised on this farm. Baffi says
he used to sell more than fifty thousand dollars worth of pigs every year. It was enough
to make a living on.

But as time went on, selling pigs became less profitable. In the 1980s, his expenses went
up and the price he could get for his pigs went down. Baffi says he was faced with a
decision. It was the same decision that many small livestock farmers faced at the time:
“I think it was a whole trend that if you weren’t big you had to get out. It was if you had
20 cows it was you gotta be milkin’ 30, or if you were milking 30 it was oh, you gotta be
milkin’ 100. The reason they weren’t making any money is that they’re not making
enough money for what they sell.”


Frank Baffi blames the drop in prices on the increase in global trade. He says US
producers started to compete with operations overseas, where expenses can often be
cheaper. To keep up, producers in the US got more efficient, and as they did so, prices
continued to drop. Baffi says he tried to get bigger, but he just didn’t have enough
money.


But just down the road there’s a pig farm that is making a profit. Frank Baffi’s neighbor
is Bruce Barton. His dad started the family in the hog business in the 1950s. Barton says
early on his Dad could see what was coming:


“He pretty much expanded because he could see that small farmers were struggling to
survive and ya know we had buy the feed in larger lots you sell your hogs in larger lots.
There was going to be less margin for each hog. You just had to have more, more of
them.”


The Bartons raised about 11 pigs when the started out. Now they raise about 100,000.
That may seem like a lot, but their operation is small compared to those that raise over a
million hogs a year.


The size of these big farms trouble many environmentalists. These farms are forced to
deal with large volumes of manure. On average one pig can generate close to two tons of
manure a year. Multiply that by one million and you get the picture. Smaller farms can
spread the manure as fertilizer on their land without much problem and large farms can
use the manure too. It’s just that they need a lot of land to spread the manure on. If they
put too much on a field, it can pollute streams and drinking water wells, and researchers
say, these farms are only going to get bigger.


Jim MacDonald researches farming trends for the US Department of Agriculture. He
says small farmers can make a go of it if they’re able to find a niche market, like
producing organic meat and milk. But MacDonald says the demand for these niche
products is still tiny compared to the demand for things like chicken nuggets and hot
dogs:


“The overall trend so far, I think, continues to be towards larger operations producing
what we might call generic or commodity like products and their prices continue to fall.”


Prices are falling because these farms continue to get bigger and more efficient. That
means fewer and fewer people are farming. So the idyllic picture we have of the small
farmer is fading.

Last year, Frank Baffi lost more than a thousand dollars on his farm. He mainly relies on
his social security check for his income. A row of empty metal crates line his barn:


“This is where I’d have pigs and this is where they would have their babies. There
probably all used up but I just haven’t had the heart to tear them out. Because I always
thought that I could at least get back to where I was. And the way it looks, you know, the
profitability of this thing, it don’t look like I’m going to go there.”


So the choices you make at the grocery store influence how farms are changing. It’s only
normal: most of us pick the cheaper product. But some people who live near these large
facilities say consumers don’t know the full cost of their choices.

Hybrid Car Ownership Drives People Together

Some hybrid car owners are starting clubs to socialize and to learn how to squeeze even more miles per gallon out of their fuel-efficient vehicles. The number of hybrid owners is still small enough that the owners feel a little “special.” The GLRC’s Chuck Quirmbach reports:

owners feel a little “special.” The GLRC’s Chuck Quirmbach reports:


Bradley Fons says he already thought about the environment a lot before he
purchased a used hybrid car three years ago. He bought a Honda Insight:


“…And I kind of figured out how to drive it to get the best mileage but there
was no support, no help out there at that point to assist me.”


Eventually, Fons found a group of hybrid owners who helped him answer
some questions about the car.

But this year, with some help from his family, Fons has done one better: he’s
organized a hybrid owners club.


(Marie Fons) “…And put your name on one of these little things, for a door prize. I know, work, work, work, work, work. Here, you guys want to work on the
door prize thing?”


Bradley Fons’ wife, Marie, is helping about two dozen people check in. This
is the first meeting of the hybrid owners group. They get to know each
other by their name, their city, and the kind of hybrid they drive:


“I’m Kathy Moody from Racine and I have a ’05 Prius.”


“I’m Bill Vaness from Waukesha and I ride in my wife’s ’03 Prius (laughs).”


(Group member) “At least you’re honest.”


“My name is Sherrie Schneider, I’m from Bristol and I have an ’06 Civic. Picked it up about a month ago and I’m here to learn a lot ’cause I don’t know how to get the mileage you all
are getting but I’m going to learn (laughs).”


And so Bradley and Marie Fons go into teaching mode, offering encouragement and advice about how to get the most miles per gallon from the cars. The hybrid of gas engine and electric batteries usually cost more to buy more than similarly sized conventional cars. So the new owners are anxious about getting the best mileage possible.


Bradley Fons preaches patience. He says for new vehicles, owners have to work through
the car’s several thousand mile break-in period before they get the kind of gas
efficiency the cars can reach:


“So if you’re getting in the forties, ya know, high 40, mid 40, to low 50s in
a Prius and it’s new, don’t worry about it, ya know. It’ll come.”


Fons says some of these cars will get miles-per-gallon in the 60s and 70s. Then there are
the controversial people who’ve become what’s known as “hyper-milers,” getting 80 or 90
miles per gallon through various means that even the hyper-milers concede aren’t
completely safe.


Fons introduces Wayne Gerdes, who tells how to steer a hybrid
in the air draft right behind 18-wheel trucks:


“Hopefully you’ll understand that this close in, is this one car to one and a half second
back, that’s a dangerous area. I don’t recommend anybody doing it, but you’re gonna find
your fuel economy going through the roof on that.”


The hybrid owners club that the Fons family has organized also takes club
members out in hybrids for some lessons on the road:


“So we’ll go down, ya know, another set of streets.”


Bradley Fons sits in the front passenger seat of a Toyota hybrid. He’s
teaching a club member named Bill a driving method called the “pulse-and-
glide.” Basically, it involves only occasionally tapping the gas pedal and coasting
a lot, so that neither the car’s motor or electric battery system is operating much.


When pulse-and-glide is done right, a monitor on the dashboard reports a surge in
fuel efficiency. After some difficulty, Fons helps Bill get the hang of it:


“All right, foot totally off. Now just on a little, there you are. You’re in it, hold it,


(Bill) “Do you take your foot off when you’re in there, though?”


“No, you have to leave pressure on it. Boy, that was the longest glide you did (laughs)!”


It’s moments like these that make Bradley Fons glad he and his family are helping to
spread the hybrid car message. But Fons sees an opportunity for members of his club to
go outside the group and become pro-hybrid activists:


“Hoping dealers get more hybrid cars, working for candidates that push alternative fuels,
sustainable energy, anything that can be done…because at this point in time it hasn’t been
coming from the government. They’ve done some, but our group doesn’t feel they’ve done
enough.”


Fons says politicians should listen to hybrid owners and hybrid clubs, because they’re
offering part of the solution to America’s oil addiction.

Living Out Aldo Leopold’s Legacy

If you feel you just cannot live without wild things, you have something in common with a conservationist who’s still influencing conservation practices almost sixty years after his death. Scholars say the theories of Aldo Leopold continue to help shape wildlife management and land preservation, especially in the Upper Midwest. The Great Lakes Radio Consortium’s Chuck Quirmbach reports:

If you feel you just cannot live without wild things, you have something in
common with a conservationist who’s still influencing conservation practices almost
sixty years after his death. Scholars say the theories of Aldo Leopold continue to help shape wildlife management and land preservation, especially in the Upper Midwest. The Great
Lakes Radio Consortium’s Chuck Quirmbach reports:


Aldo Leopold is probably best known for writing A Sand
County Almanac. That’s a collection of essays about finding harmony
with nature. His ideas about preservation changed while working for the
Forest
Service in the southwestern U.S. Rick Stel of the Aldo Leopold
Foundation
says one day in the early 1900’s Leopold shot a wolf thought to be a threat
to
cattle. The female had pups with her.


“And he says he got there in time to see the
fierce green fire die in her eyes… and it was at this time he realized
we’re going about this in the wrong way… we really need to look at all
creatures and everything as a community.”


Leopold’s epiphany led to writings that won him national attention. he
eventually moved to Madison, Wisconsin – first to work in forest
research and later at the University of Wisconsin. There, he taught the
nation’s
first course in game management.


In 1935, he bought an abandoned farm in the sandy floodplain of the
Wisconsin River. It became the inspiration for many of the essays in A Sand County
Almanac.

Most tours of the site start at an old chicken coop that was the only
building left when Leopold bought the place and is the only structure
now. The shack, as Leopold called it, has no electricity or furnace.

On chilly days tour guides light a fire in the fireplace and talk about
the ideas Leopold developed while visiting the shack with his family.
The Leopold Foundation’s Buddy Huffaker says Leopold worried about
becoming disconnected from nature.


“His February essay talks about the two spiritual dangers of
not owning a farm. One is to assume food comes from a grocery store, and the second is that heat comes from a furnace.”


Outside the shack Leopold and his family worked to return the land to its
pre-agricultural state. They planted thousands of pine trees. The also undertook
one of
the first prairie restorations. The Leopold family spent a lot of time
discussing how
people were damaging the environment.

About one hundred yards from the shack Buddy Huffaker brushes off
a plaque that’s set in the ground. at this spot, Leopold sawed apart a
lightning-damaged oak tree that he called the good oak. He wrote
about the experience in a famous essay that Huffaker says is really
about natural history.


“As he and his family saw through the growth rings of the oak, he
goes back in time to see how people have disregarded other natural
elements in the landscape – the decimation of turkeys and other
species that we hunted into extinction locally or entirely.”


But turkeys, sandhill cranes and a few others species have come
back–in part because of Leopold’s conservation ethic. Now his
followers are trying to protect more things.


To spread Leopold’s message some groups have started sponsoring
readings of Aldo Leopold’s A Sand County Almanac. At a library in Lake
Geneva
Wisconsin Jim Celano reads from the essay about the good oak.


“Now our saw bites into the 1920’s the Babbittian
decade when everything grew bigger and better in heedlessness and
arrogance – until 1929 when stock markets crumpled. If the oak heard them
fall, its
wood gives no sign.”


Celano is a former commerical real estate developer who now heads
a land conservancy group. He says he’s trying to convey Leopold’s
ideas to other developers.


“That we’re not here to say no to development… but to ask
they be sensitive to what they’re developing. And when you step on
their parcel, after their development is done, that the first thing you
notice is what they’re preserved and protected.”

But even Aldo Leopold’s famous land around the shack is not immune
from modern threats. As a woodpecker hammers overhead, the noise
from a nearby interstate highway intrudes into the scenery. The
Leopold foundation’s Buddy Huffaker says Aldo Leopold knew the future
would bring new threats to the natural world.


“But I think that’s Leopold’s challenge to us. He
understood progress was going to continue. He just wanted us to
contemplate what we wanted that progress to be. And how far it
should go.”


And with sales of A Sand County Almanac bigger now than when it was
published in 1949, it ‘s a future Aldo Leopold might be helping to
shape.

Shoppers Challenge ‘Homegrown’ Label

It’s harvest time for some of the local crops. The fields are ripe with homegrown produce. Some supermarkets are advertising homegrown vegetables for sale. But some supermarkets define “homegrown” a lot differently than you might think. As part of an ongoing series called, “Your Choice; Your Planet,” the Great Lakes Radio Consortium’s Joyce Kryszak reports on some misleading marketing that’s hurting local farmers:

It’s harvest time for some of the local crops. The fields are ripe with homegrown
produce. Some supermarkets are advertising homegrown vegetables for sale. But some
supermarkets define “homegrown” a lot differently than you might think. The Great
Lakes Radio Consortium’s Joyce Kryszak reports on some misleading marketing that’s
hurting local farmers:

This time of year you can find the true veggie-lovers at the roadside stands and
farmers markets. Here you can fill your bags with vegetables and fruits so fresh
from the field that they’re still warm from the sun.


But many people racing between work and home don’t have time to make an extra
shopping trip. And they don’t have to. They can pick up the same succulent,
homegrown produce right at the local supermarket.


At least that’s what the stores advertise. Shelley Stieger shops at the
supermarkets. She says she’s been a bit disappointed by her grocery store’s
“homegrown” produce.


“My impression from the ad would be that they’d be from around here – but I don’t
think they are.”


JK: “Why is that? What do you base that on?”


“Well, I bought some tomatoes the other day and it said homegrown. I thought they
were. But I got them home and they aren’t homegrown tomatoes. They still taste like
plastic tomatoes, so they’re not.”


That all kind of depends on your definition of homegrown. The tomatoes that Stieger
bought were homegrown in New Jersey. But Stieger lives in western New York. Where
she lives, the tomatoes were still pretty green on the vine. And the homegrown
eggplant that her store advertised in its flyer? That local crop won’t be ready for
another week. The plump, purple eggplant in the produce section now is actually
from out of state. Stephanie Zakowicz is a
spokesperson for the supermarket chain Tops.


“For Tops, our definition of homegrown is anything grown within a 250 mile radius of
the store. And this year with the weather not cooperating as much with our farmers
as usual, unfortunately, when our ads are produced so far in advance, sometimes the
product doesn’t get delivered and we
need to procure it elsewhere.”


Tops may not be alone. Other supermarket chains may also be defining homegrown a
little far a field.


When shoppers learn about the broader definition, they’re usually not very happy.
Zakowicz says Tops puts signs in the stores saying where their produce comes from.


But apparently a lot of people never see the signs. It was news to the people who
have been calling county politician Jeanne Chase. She says her constituents feel
they’ve been fooled.


“They were very concerned. Because they read when it says homegrown produce and
they get a very warm and fuzzy feeling, because they assume they know the people who
are growing the produce and that it’s really being grown in their county, in their
own backyard, so to speak. And they were a little outraged to find out it was being
grown in Pennsylvania or New Jersey’s backyard.”


Zakowicz from Tops says supermarkets really don’t have a choice. It’s a question of
supply and demand. People now expect year-round access to their favorite produce.
And this year’s particularly wet season has prevented local farmers from bringing
those crops in on time – or in peak condition.


Bill Zittel’s family has been farming in Eden for about a hundred years. Zittel
says the definition of homegrown isn’t the only thing that’s changing. When stores
can’t get local produce because isn’t yet in season, they buy from out-of-state
instead. Zittel says that might leave local farmers with nowhere to sell their
crops once they are ready.


“There’s a fine line between production, quality, what you have to sell the product
for, and who’s going to buy it. The end result is you can produce all the food you
want, but if there’s nobody to buy it, then you might as well not do it, because
it’s going to go to waste.”


Bottomline, Zittel says it’s difficult to compete with growers from warmer climates
that get multiple growing seasons. Great Lakes states get one – and in northern
areas, it’s a very short one. Still, local shoppers expect the sweet corn they buy
in late summer to be local… not the second or third crop of the season shipped in
from Florida.


Despite the disagreement about the use of the term “homegrown,” Stephanie Zakowicz
from Tops says the supermarket chain is committed to local farmers.


“It’s a high priority for us to supply our customers with homegrown products.
They’re wonderful. Our customers look for them. And we try to work with our farmers
to get as much as we can, as long as they meet our quality standards.”


And apparently, only if they meet the timing of their ads.


So, if it’s important to you that your produce is truly locally “homegrown,” it’s a
good idea to check the fine print. Most supermarket chains say “homegrown” produce
should have a sign declaring near whose home it was grown.

Green Conscience vs. Green Consumerism

Most of us are conflicted when it comes to the environment. Polls show the majority of
us consider ourselves to be environmentally friendly. But, our day-to-day decisions often
don’t measure up to an earth-friendly lifestyle. Part of the reason is that there’s lots of
confusion about what’s best for the environment… Another reason is that being earth-friendly is pretty darned inconvenient. In the first report of an ongoing series we’re
calling ‘Your Choice; Your Planet,’ the Great Lakes Radio Consortium’s Lester Graham
explores the dilemmas we face when we attempt to do right by the environment:


It’s tough, trying to be green, or earth-friendly or whatever you want to call it. I mean…
most of us aren’t interested in always trying to find the eco-friendly clothes or trying to
figure out the differences between the “all natural” and the “100-percent real” juice. And
then there’s stuff. There’s all kinds of stuff we need… alright… maybe we don’t NEED
it… but – hey – everybody else has one. Why shouldn’t ?


There’s a gap between being a flower-sniffing, hemp-wearing, tree hugger… and a
regular person trying to be a bit more environmentally friendly. The Executive Director
of the Sierra Club, Carl Pope, says if you’re struggling with that gap… you’re not
alone…


“We haven’t solved the problem of linking up our values and our consumption. Most of
us consume out of habit and convenience. We don’t consume out of our deepest values.”


So… we BELIEVE that we ought to save the earth for future generations. And most of
us have a few habits that make us feel a little better about ourselves. Maybe we bring a
coffee mug to work instead of using Styrofoam cups. Or we might take the bus or the
commuter train once in a while, you know, to save the earth from our bit of car exhaust.


But the real challenge comes when we start buying stuff. You know… like groceries,
and cars, and appliances. Stuff. Joel Makower is the founder of GreenBiz-dot-com. It’s
website that bills itself as a “The Resource Center on Business, the Environment and the
Bottom Line.” He says the big impact on the environment takes place in how we spend
our money…


“I think consumers know intuitively that every time they open their wallet they cast a
vote for or against the environment. But, doing that’s a very complicated matter.”

It’s complicated because even if you walk into a store determined to buy only the
products that are the most environmentally friendly… you’re bombarded with conflicting
claims. Say you’re looking for trash bags. Are the bags claiming to be made of 80-
percent recycled plastic any better than the ones over here called ‘enviro-bags?’ I don’t
know. And that’s the problem. Most of the time we really don’t know which products
are the safest for the environment. And don’t even get me started on the whole paper or
plastic grocery bag question.


Joel Makower says we care, but we’re confused.


“There’s a huge gap between green concern and green consumerism. And that’s
everybody’s fault.”


Makower says companies don’t know how to market their products’ environmental
attributes and when they do try, he says, they often do it poorly or misleadingly. And
we’re afraid to try new things… not knowing if we’re being suckered into a poorly
performing product that SAYS it’s more environmentally friendly.


So, often, rather than deal with all that confusion… or instead of spending hours and
hours researching everything we buy…. we figure… “Well, it can’t be that bad; can it?”


Charles Ballard is an economist at Michigan State University. He says, really, there’s
only so much you can ask of us…


“Keep in mind that people can’t be expected to become saints just because they’re
interested in the environment.”


He says most of us see being environmentally friendly something like extra credit… or
something we do when we’re better off financially… kind of like a luxury item that we
can feel good about. Ballard says most of the time we’re more distracted by the glitz and
glamour we see on TV or read about in magazines and want just a little bit of that good
life for ourselves…


“What we have is a situation where immediate gratification, where grabbing for all the
gusto you can right now is the thing that’s driving our decisions.”


And when you’re going for the gusto… you tend to forget about the environmental cost
of your lifestyle. We buy the wrong things… and we buy too many things. We just plain
consume too much. But, then… sometimes our conscience starts eating at us… and
before you know it, we’re being a little more careful about recycling at work… or some
other little contribution to the earth’s well being.


The Sierra Club’s Carl Pope says environmentalists… or those of us who like to think of
ourselves that way… keep trying to do better…


“The American people’s values and ideals are ahead of their own habits. That’s actually
why we have religions, is because people want to be better than they are. And one of the
reasons we have an environmental movement, I think, is because Americans want to be
better than we are.”


And so… we sin in all of our consumption… and then make restitution by trying to be
better, more earth-friendly consumers. The problem is… as one writer put it… you can’t
really buy your way out of consumption. When you get right down to it…. you really
just have to buy less. That’s a tough one.

HIGHER PCBs IN FARMED SALMON

Researchers with an environmental group have found that farm-raised salmon are contaminated with higher levels of PCBs than wild salmon. The Great Lakes Radio Consortium’s Lester Graham reports:


The Environmental Working Group
tested salmon from grocery stores for
PCBs. It found that average levels of
PCBs in farm-raised salmon were
five times higher than in wild salmon.


Ken Cook is the President of the
Environmental Working Group. He
says PCB contamination is serious.


“It’s got a cancer risk associated with
it. It can also cause developmental
problems in children,
so we’re concerned that we have
the farm salmon cleaned up,
get rid of some of these PCBs. And
it won’t be too hard to do.”


Cook says the higher PCB levels
come from the feed for the salmon.
It’s ground up and concentrated fish.
Concentrating the fish concentrates
PCBs, giving farm-raised salmon
higher exposures. The farm salmon
industry indicates that levels are well
within the standards set by the Food
and Drug Administration, but the
PCB levels in the farm-raised salmon
do surpass the stricter guidelines set
by the Environmental Protection
Agency.

School Connects Kids to Healthy Eating

American kids are overweight. Nutritionists say one major reason is that kids are eating too much junk food, and not enough fresh produce. A government pilot program is trying to get kids to eat more locally-grown fruits and vegetables in school by giving them out for free. The Great Lakes Radio Consortium’s Rebecca Williams visited a school where the experiment is underway:

American kids are overweight. Nutritionists say one major reason
is that kids are eating too much junk food, and not enough fresh
produce. A government pilot program is trying to get kids
to eat more locally-grown fruits and vegetables in school by giving them out
for free. The Great Lakes Radio Consortium’s Rebecca Williams
visited a school where the experiment is underway:


It’s 9 am and the halls are quiet at Everett High School, in Lansing,
Michigan. Parent volunteers are setting out bowls of bright
pink grapefruit segments on stands in the hallway.
They’re working quickly, getting ready for 1500 hungry teenagers.


(bell rings, noisy chatter swells, sneakers squeaking)


Kids slow down when they pass the fruit stand. A few kids take a bowl…
but not that many.


“Ain’t nobody want no grapefruit?”


(kids chatting)


“They’re hesitant to try it because it’s new, they’ve never tasted grapefruit
before.”


(final bell ringing under)


Lynn Beard is energetic. When she’s not handing out
fruit, she’s teaching nutrition here at the school.
As much as she talks to kids about their choices, even she can’t predict
what they’ll eat.


The hall empties. Lynn Beard sees a few stragglers.


“Sir, have you ever had grapefruit, honey, before at home? Yes,
okay.”


She pulls Brandon Washington over to the fruit stand…


“He was going to try it, and he put it back down because someone said it
was sour.” B.W. :”I was going to try it.”
“Honest reaction?”
“Honest reaction? Tastes like it needs some sugar in it.”


Even though he’s not a grapefruit fan, Washington says he likes having
the fruit and veggies here.


“Now that they got them at school, I eat it more. And that’s good,
too, because nutrition values, good for your soul, you live longer, right?”


Washington says, before he could get free fruit and vegetables during the day,
he felt hungry between meals. Many of his classmates skipped breakfast.


Lynn Beard worries about her students’ eating habits.


“English, math, social studies, aren’t changing the obesity rate. Early
onset osteoporosis, we’re seeing a huge jump in. Type two diabetes in children.
What are we doing to educate our kids on how to change? Isn’t that an effective
place to use taxpayers’ dollars?”


That’s one of the questions behind the Fruit and Vegetable Pilot.
It’s a year-long experiment, funded by 6 million dollars from the 2002 Farm
Bill.


107 schools in Michigan, Ohio, Indiana, Iowa and New Mexico were
chosen. It’s a mix of schools: large and small, rural and urban.
The hope is that kids will learn to like fruits and veggies… and be
cultivated into new consumers.


Agriculture promoters hope one of the spin-offs will be a new market for
local farmers. With few exceptions, the pilot program requires that
schools buy only American produce, and local produce if
they can. Fourteen of the pilot schools buy directly from farmers.


Everett High School gave kids some locally grown produce. But Lynn Beard
says the kids still don’t know much about the food that grows where they live.


“Kids don’t understand seasonal fruits, they were so upset we weren’t
getting watermelon in January. ”


And Beard says just getting local produce at all was difficult.
Schools such as Everett High School buy from national food service
companies. The companies often sell these Michigan schools
Washington apples.


Marion Kalb directs the National Farm to School Program. It’s
part of a non-profit group that works to connect farms
and schools. Kalb says food service companies don’t make a
special effort to buy from local farms.
But she thinks schools can influence their suppliers.


“If there’s instruction on the school side to say, you know we’d like
to know seasonally what’s available locally, then that gives incentive
to the distributor to try and make buying from regional or local farmers a
priority.”


And it makes sense to most people to sell apples nearby rather than shipping
them miles away.

In a farmer’s market full of flowers, Dwight Carpenter is one
of the few farmers selling produce this early in the year. That’s because
he grows vegetables in a greenhouse.


He sells at two farmer’s markets and a store on his land. He says it’s enough to survive,
but he’d like to expand to places such as local schools.


“It’s kind of a difficult way to make a living, and if better markets were
established, such as schools and hospitals, and that kind of thing,
grocery stores, and if that were turned around, that would help the farmer too,
to be able to hang onto whatever he’s got, rather than to have to sell it off to subdivisions
or whatever.”

It’s new.” cash register beeping)


Although the kids at Everett High School are getting used to eating more
produce from the free program, you won’t find many fruits and vegetables
for sale at the cafeteria. That’s because the cafeteria competes with nearby fast food
restaurants.


You also won’t find many nutritious snacks in the vending machines. The school needs
the revenue it gets from the candy bars and chips.


Kids are still lining up at the soda machine today. But some students
think the fruit and veggie program is slowly changing their eating
habits. Wynton Harris is a sophomore.


“Last year everyone was eating junk and this year they cut down a lot. I
can tell, because I’m seeing less people at the machines, and more
people taking fruit. And I said, wow.”


And Everett High School’s nutrition teacher, Lynn Beard, has a vision: vending
machines that offer fresh produce instead of potato chips.


“If there’s nothing free, I think we’d have a number of kids who, instead of buying
a dollar pop, would buy a dollar pear.”


The free fruit and vegetable program ends with the school year. But some 70 schools
in the U-S buy from their local farmers even without special federal funding.
Even so, Lynn Beard doubts her school could afford to keep this program going
without federal money.


“I think next year I’m not going to want to be around here without this
grant, cause there’s going to be so many complaints. Where’s our fruit? Why
can’t we get some fruit? I’m dreading next year. I’m just going to have to keep a smile on
my face and say, “Talk to your government.”


But government support for the program is uncertain.


Congress will debate the future of the fruit and vegetable program. And whether
government should be marketing fruits and vegetables in the schools… and further
subsiding the farmers who grow them.

Food Co-Ops Losing Grip on Health Food Market

There was a time when people who ate organic and natural foods
were considered the hippie-fringe. But healthy eating is becoming more
mainstream, and the market for natural and organic foods is growing.
That’s causing some shifts in the food industry. Small mom and pop
stores are no longer the only places to find health foods.
Conventional
supermarkets have organic produce sections and large natural food stores
are opening nationwide. This has many small stores wondering how they
are going to survive. The Great Lakes Radio Consortium’s Julie Grant
reports:
